Thanks for the recipe and the heads up sky. I didn't get around to making the chicken yet, so I'll keep that in mind.

honey - I made this broth and it turned out great. I made a double batch (half for a neighbor with a new baby and half for us) of chicken stew on the stove top using two rotisserie chickens from Costco. I used all the bones from both chickens without increasing the water so it was probably a lot more concentrated than the recipe. I added a little of the broth back to the stew later and it was delicious.

I also used the broth in this 15 bean soup recipe and it was sooooo good! I used two cans of Rotel tomatoes instead of the fire roasted tomatoes and it gave it a nice little kick. I also skipped the chili powder.

Used the IP to defrost/reheat chili from the freezer last night. Success.

Ok! I'm going to use our IP this weekend. We've used it exactly once in the 15 months that it's been in the cupboard. I got a 7 " cheesecake pan for Christmas, so I'm deciding between that or a meal. I don't eat any meat except chicken so our use will be restricted by that.

You can't go wrong with cheesecake! Lol. Just don't overbeat the eggs or it will puff up into a soufflé in the IP. I really liked the pumpkin one I made. A lot of people love the This Old Gal NY Style one, but I haven't made it yet.

Soups usually come out awesome in the IP too. But they definitely take awhile to come to pressure (like 20 min or so- could be even longer if very full!) so just make sure to plan for that.

    Good luck!

DD is obsessed with black beans and has been asking for them for lunch everyday.

I'd like to make a homemade batch in my IP. Has anyone done beans before? If so, do you mind sharing your recipe? Thanks!

    Ha! So funny

Truth be told, these days I am really only using my IP for rice and mashed potatoes. I tried some of the other recipes early on, and they were good, but, I still prefer my crock pot for those types of recipes (Mongollian beef, etc.) Also, my crock pot is larger which works better for my family as we are big eaters. In retrospect, I should have purchased the 8q IP as I imagine I would use it more.

Worlds have collided through Instant Pot. Gia just liked a post (the strawberry one) in the Instant Pot FB community by a woman from my small hometown.
