    Default Post Your Weekly Menus ~ Part III

    Menu planning for the week worked out really well last week. Knowing that it was all planned and we had all the ingredients at the house helped motivate us to cook rather than go out.

    Sunday: Marinated pork tenderloin, roasted broccoli, baked potato
    Monday: (DH work) left overs
    Tuesday: Chicken Stir Fry over Rice
    Wednesday: Gnocchi w/ vodka cream sauce, small salad, garlic bread
    Thursday: Chicken breasts, cheesy broccoli, mashed potatoes
    Friday: (DH work) left overs
    Saturday: Out

    Menu planning is going to get interesting/challenging for me since we are going meat-free, beginning Ash Wednesday, for the duration of lent. I hope I am up for the challenge! (We will include fish per DH's request)

    Sun- Spaghetti w/ turkey meatballs, salad, garlic bread
    Mon- Roasted chicken, mashed potatoes, spinach w/ evoo and garlic
    Tues- Corned beef w/ cabbage and all the fixings (since we can't have meat on St. Paddy's day!).
    Vegetarian menu begins:
    Wed- PW's Cauliflower soup, salad, homemade beer bread
    Thurs- Penne with Pumpkin, roasted broccoli (trying Laura's recipe)
    Fri- Fish, brown rice, asian style veggies
    Sat- Out

    DS2 03.07.12

    steviem, that's awesome that you guys are giving up meat for Lent! Let me know if I can help in any way (I've been vegan for nearly a year and was a vegetarian for more than a decade before that).

    Sunday: Rosemary biscuits; chickpea gravy; garlicky red potatoes
    Monday: Baked tofu; mashed celeriac; roasted asparagus with lemon zest & shallots
    Tuesday: Leftovers
    Wednesday: Chickpea and cashew biryani
    Thursday: Leftovers
    Friday: Out
    Saturday: Vegetable fajitas on homemade corn tortillas; Spanish rice; pinto beans

    Sun: rotisserie chicken, broccoli salad and mashed potatoes
    Mon: shrimp and sausage jambalaya, salad
    Tues: beef enchiladas, spanish rice and corn
    Wed: pork tenderloin sandwiches, baked beans, pasta salad
    Thurs: spaghetti, salad
    Fri: bacon wrapped sirloins, twice baked potatoes and glazed carrots

    SUN: stuffed pizza burgers, tater tots and applesauce
    MON: Red beans and rice, salad
    TUE: spaghetti with meat sauce and salad
    WED: Sprinkles chicken, rice, and corn
    THU: Steak tacos with fixings
    FRI: Out (DS has a carnival at his school)

    Sunday: Tukey verde enchiladas, roast sweet potatoes, refried beans
    Monday: Pizza
    Tuesday: Chicken and dumplings
    Wednesday: Potstickers, green beans and rice
    Thursday: Ravioli alfredo, salad, bread
    Friday: Fish fry to kick off Lent!

    Sunday: ham and cheese melts, chips
    Monday: paprika pork chops, broccoli, caramelized onion bread pudding
    Tuesday: white wine salmon, cauliflower mash, sauteed carrots and cabbage
    Wednesday: beef and snow pea stir fry
    Thursday: baked ziti, garlic bread, salad
    Friday: home made pizza

    MrsD...your pork tenderloin sandwiches look interesting, do you prepare the tenderloin in a special way?
    Instead of having "answers" on a math test, they should just call them "impressions," and if you got a different "impression," so what, can't we all be brothers?

    Myshel- what is Sprinkles Chicken? Sounds intriguing!

    Here's our menu for the week:

    SUN: Beer Can Chicken, Grilled Sweet Potatoes, salad, rolls
    MON: Pasta (tortellini from the freezer), homemade meatballs, Ina's Roasted Asparagus
    TUES: Ahi tuna, veggie potstickers
    WEDS: Chicken with Sweet & Sour Fennel, creamy polenta and something else...
    THURS: Steaks, roasted broccoli or some other veggie on the BBQ
    FRI: Out

    Last week was a total bust, so I'm repeating much of it since I have the stuff on hand.

    Sun - veggie lasagna, french bread, salad
    Mon- PW beef w/ snow peas
    Tues - leftover lasagna
    Wed - out before soccer
    Th - crockpot pulled pork, coleslaw, sweet potato fries
    F - leftover pork sandwiches
    Sat - out
