I've tried Angie's recipe before and it is delicious! I usually substitute cilantro instead of parsley but some people don't like the flavor of cilantro. We also serve it over grilled bread as an alternative.

I don't want to make a new thread! I need ideas for a potluck. I don't know if we have kitchen facilities to warm anything up and am going to be driving around for a few hours before we reach our destination, so it can be something that needs to be kept cold, I can put it in a cooler. I'm looking for kid friendly, not to complicated to make and at least semi-healthy.

These are my go-to pot luck dishes

    - arugula watermelon salad
    - tabbouli - I make it with couscous though so it's a bit heartier
    - pasta salad with pesto
    - gazpacho (with paper cups to serve it in)
    - panzanella (Italian bread salad) - I like this because it gets better as the bread soaks up the juices

    Thanks!

I actually asked ds1 what he thought we should take & he said watermellon, so I may just make a fruit salad and call it good!

Anyone have any new and different but easy ideas? Need something for an "open house" party we are going to tonight and I do not know the menu. Kids are invited, so maybe something kid friendly?

My go-to "wow" appetizer is a steak bruschetta. Easy to put together, but not necessarily kid friendly. I can see if I can dig up the recipe online if you'd like it.

my big hit is the layered hummus dip. There are tons of recipes; you can google layered hummus dip. I like it because it's on the healthier side and a little different

On the not healthy side is buffalo chicken dip, but you can serve with celery so it looks healthy??

Of course, going to the Whole Foods deli bar, you can make a lovely anitpasto platter. Google for that and you'll find tons of gorgeous photos. Also, Costco has a ton of frozen or refrigerated appies this time of year as well as huge blocks of cheese.

Everyone I know loves the buffalo chicken dip (except me).

My go-to is white trash crab cakes, but it's tricky to bring them because they're served warm.

Thanks, everyone! I will keep some of these ideas in mind for next time!

I forgot I had a bunch of green onions, so I made a cheese ball. We also have some frozen spanakopita in the freezer that I can bake and bring.
