I haven't made them in years, but my "recipe" (such as it was!) was pretty simple.
Cut up a few potatoes (I'm sure I used brown ones, b/c that's what I always buy unless a recipe says otherwise) into whatever size/shape you like. I usually did ~finger-sized.
Soak them in cold water for 15-20 minutes, then dry them thoroughly.
Heat a couple of inches of vegetable oil in a big heavy pot. Put in potatoes in small batches.
OMG gayle, this is such a foodie hot button issue. I think most people agree that the best way to make proper french fries (crispy on the outside, soft in the middle) is to fry them twice -- once at a lowish heat to cook the potatoes, then again at a high heat to brown them and crisp the outside. I've never even attempted it, because the thought of deep frying not once but twice! gives me hives. I just stick with In N' Out well done, or McDonalds. Or most French bistros make awesome fries.

First thing I do is pour a few inches of oil into a deep(ish) pot. Let it heat up on medium-high heat.
While it's heating, wash and peel the potatoes (you can also leave the peel on if you like), and cut them into "fry" strips. The oil should be popping and making noise - don't put anything in until it's quiet!
Slide the potato strips in, they should bubble up and turn golden pretty quickly. Turn them around as they brown - they should be done in a few minutes.
Fish out the fries and finish off with fresh ground sea salt and pepper - yum!
Use a slotted spoon to take them out
