I have been wanting to try to make the Lara bars for the kids. I can't eat them anymore. They were one of the few snacks I could eat when I was nursing DS2 on an elimination diet!

Well, DS is back to his old habit of not eating his lunch at telling me he wants to buy "hot lunch" at school. I am okay with him buying on occasion because his hot lunch program offers mostly healthy lunch options (whole grains, organic, minimum processed food, etc.), but, it is expensive and adds up quickly.
Anyway, today's lunch which came home mostly untouched was:

Oh, to Ohana and Laura...I will say that I'm not a huge Lara bar fan either,to be honest. As in, in a pinch I might buy one on a road trip,but they're not a favorite. However, the homemade ones are delicious. Like, super delicious. And of course, you can customize them to your tastes as well, which helps, too.
Today I did:
Ham/swiss and turkey/cheddar roll-ups (cut into bit sized pieces and then I put 2-3 on a toothpick - so about 5 toothpicks total)
Carrots and ranch dip
Granola with added dried mango and peanuts
Juice
DS ate everything! I was nervous about the roll-ups because he has never been hot on lunch meat, but I think the toothpicks really did it for him. I'm so pleased! Funny though, he watched me pack his lunch this morning, he got excited about the roll-ups and then asked me to put the thing of crackers I packed back because it would be too much food.
DD has been eating everything we send! SUCH a change from last year where there were days she ate a few grapes!

Edemame (aka soybeans): My kids LOVE them! I get them frozen from Costco - a big box has 10 'serving sized' bags that you nuke for about 2 minutes. We keep them on hand for pre-dinner snacks. We had them last night, then DD took the leftovers. What we do is take the pod (has 2-3 beans each) and I cut them in half between the beans and throw those in a container. DD likes to 'pop' them out of the pod into her mouth. I love that it is a veggie with a protein content!

I was on autopilot this morning: Ham sandwich + carrots + hummus in big bento box. Cut up pineapple in smaller box. Handful of Doritos. Water bottle. I feel kind of bad about today's lunch!
lil-geek, you may not need to cut the edamame. We have it pretty regularly at our house and both my 2 yr old and 5 yr old have no problems stripping the beans out of a whole pod. I tend to save ti for days when I'm not sure they'll eat the main course because they come running for edamame and then I use them for barter LOL.
