I got my girls' teachers gift cards to the gourmet grocery across the street from the school. I got one as a baby gift and really appreciated it. It's not creative at all, though
In the past, I have given plants.

I am a teacher, and really, anything is sweet. My favorites have been candy or gift cards to places like Barnes & Noble, or a teacher supply store. I always give my sons' teachers Visa gift cards.
I just got my favorite gift ever yesterday. A mom had taken a bunch of pictures of my class at field day, and made a collage poster at Walgreens. She put it in a plastic frame. It's beautiful and my students and I love looking at it. You probably don't have enough pictures of the class this year, but maybe an idea for next year.
I'm making the class gifts for DDs two teachers this year. I'm making aprons. I had the art teacher trace each child's hand and will add fabric handprints of each child to the aprons.
I've in the past given gift tins of handcreams and soaps from Mor which smell amazing and come in really lovely packaging. I try to give things that they could either use up or regift as I guess they'll get a million things at Christmas.
There was a thread on this subject. IIRC, it was around the holidays. I searched for it, without any luck. But I know there is one somewhere. I'm sure one of the mods can find it.
Last year we did a spa gc; teacher loved it. Same teacher this year (preschool) and we might do the same. she's actually retiring this year, and she's mentioned she has some house projects she is looking forward to working on - so I may get her a Home Depot gift card.
The class gift is all of the kids holding a letter from a Bible verse "Love one another". Just enough kids to spell it out. The room mom will print/frame and give to her at the end of year picnic.
