    Sposa06 - this is the recipe I use for the stew. I buy the seitan but one of these days, I need to try making it.

    We either marinate then grill flank steak (also good in burritos/quesadillas), or we get NY strip or ribeye (for my husband- too fatty for me). For steak just to eat, we usually do it in a cast iron skillet on the stovetop/oven.

    looch: do you have a recipe for the lemon shallot asparagus?

    Those who've made French Dip...can I have the recipe that you used? I made French Dip this weekend and it was pretty good but I wanted to compare recipes and maybe change up a few things next time. Also what meat worked best? I used a Chuck roast but it wasn't as tender as I was hoping.

    Thanks very much, larslobster! That sounds so good—I will have to try it soon! I need to try making my own seitan eventually, too. I've read several recipes for it, I just haven't taken the plunge yet.

    We started a vegetarian diet on Ash Wednesday so this will be our first full week of veggie meals! (DH is already complaining.....great!)

    Sun: Linguine w/ shrimp scampi (we are allowing fish/seafood in our diet), roasted asparagas, caprese salad
    Mon: Mushroom barley soup, salad, rolls
    Tues: Grilled fish, brown rice, broccoli with garlic and lemon
    Wed: Homemade veggie pizza, salad
    Thurs: Smart Ground tacos, pinto beans, rice
    Fri: Homemade mac n' cheese, roasted asparagas, watermelon
    Sat: Out (We're going to a theme park so this will be challenging!)

    Sunday: Tarragon chicken, couscous, and veggies
    Monday: Sirloin steak with Dijon port sauce, noodles, and green beans
    Tuesday: (DH work) left overs
    Wednesday: (last week's Thursday) chicken, cheesy broccoli, mashed potatoes
    Thursday: St. Patrick's Day dinner at my parents!
    Friday: Pizza and fried dough bites
    Saturday: Out

    Mo - buffalo wings, potato crisps, stuffed clams
    Tu - lasagna
    We - leftovers or out
    Th - breakfast night
    Fr- corned beef and cabbage

    Let's see how I do since I have report cards to do this week!

    Mon- taco soup (from the freezer)
    Tues- chicken noodle soup/grilled cheese and tomatoes
    Wed- shrimp and sausage jambalaya, salad
    Thurs- reubens/salt and vinegar chips

    I am writing my menu/grocery list right now, so I figured I'd share. I just plan for 7 meals in a week and cook whichever one sounds the best to me that day. We are trying to lose/maintain weight loss, so we eat a lot of stuff from cooking light.

    Chicken and Couscous salad
    Fish Tacos with Lime-Cilantro Crema (There are not that many things that my 3 year old and 5 year old will both eat happily, but weirdly, this is one of them.
    Caramelized chicken and sweet potatoes
    Chicken broccoli casserole
    Pesto chicken pasta
    Chicken Tamale Casserole (another one that the whole family devours and is quick and easy)
    Bean burritos
