Our 5th anniversary is coming up and we're going to be spending it at a lake house this year. Instead of going out to dinner (since the nearest nice area is about 80 miles), I'm planning on making a nice dinner. DH has no requests other than cheddar biscuits and I'm lost as to what to make to go with them.
DH isn't a huge fan of beef, and pork is out. The only fish he'll eat is salmon - so that kinda restricts some options. Just about anything with chicken is good.
So, does anyone have any menu ideas? I'm not wanting to spend more than a couple of hours in the kitchen if I can help it.
Oh, and drink and dessert suggestions are good too. Thanks!

How about Italian Parmesan Chicken? Take a packet of dry italian dressing (don't "mix" with the oil to make the dressing, keep it dry) and mix with Parmesan cheese - coat chicken with dry mixture, place in baking disk, and bake until done. Super easy to make and also really good.
For sides, I'd just take into consideration what you guys normally like, and see if there is anyway you can put a twist on it.

Parmesan chicken is a favorite here as well. I make with cutlets with italian seasoned bread crumbs mixed with shredded parmesan. Dip chicken in flour, then egg, then bread crumbs and saute in olive oil/butter mixture. If you'd rather do chicken breasts, I'd probably bake since I at least can never saute chicken breasts the way I like them.
I was also going to suggest a roast chicken. This is my go-to "nice" meal, because it couldn't be easier and it's such a yummy Sunday night kind of dinner. I think it would go with the biscuits and then some sort of veggie. Let me know if you'd like my roasted chicken recipe (it's Barefoot Contessa).

I second the Barefoot Contessa roast chicken recipe. It's fantastic and pretty easy to prepare. Then it just roasts in the oven for 90 minutes, so you don't have to stand in the kitchen working on it or watching the stovetop.
With chicken and biscuits, I'd also suggest mashed potatoes or baked potatoes and whatever vegetables are fresh and readily available in your area. Yum, now I want to come crash your anniversary dinner!
Rosebud--thanks for posting the link! I agree with the mashed potatoes idea--they're really easy to prepare homemade if you're not spending a ton of time on the chicken.
