What about a recipe for the chicken noodle casserole? I just went back to work after having my second baby and a casserole I could prepare the night before would be AWESOME.
1/2 bag egg noodles; cook to al dente
1 can cream of chicken soup
1/2 c. sour cream
1/2 c. milk
1c. frozen peas, thawed
1 1/2c. diced chicken (I used leftovers from a whole bird I roasted last week)
1/4c. grated parm
salt
pepper
Stir together soup, sour cream milk, cheese and spices in large bowl until well mixed. Add chicken noodles and stir to coat all. Put in a 2qt. casserole (I'm baking mine in a 9x13 pan because, oddly, I don't have a 2qt. casserole dish) and bake 30-40 min. at 350.
I topped it with breadcrumbs mixed with melted butter till crumbly, but you probably could do potato chips or cornflakes as a topping if you wanted.

Well we did a terrible job following our menu this last week, so a ton of repeats for next week:
Sun: steak, twiced baked potato, vegetable
Mon: homemade pizza, spinach salad
Tues: baked dijon salmon, herbed rice and vegetable
Wed: potato soup and grilled cheese
Thurs: Thanksgiving dinner at noon, probably cheese and crackers to snack on during dinner time
Fri: ravioli with italian sausage and marinara, salad
Su: Pizza casserole, salad
M: Sloppy joes, tater tots, salad
T: out
W: French dip sandwiches, cole slaw, fruit salad, eclair cake
Th: Thanksgiving at ILs
F: out at H.S. football playoff game
Sa: Roast chicken, baked garlic/cheese grits, broccoli
MKVH: Thanks for posting that recipe. I make one that is similar but like the addition of sour cream in yours.
And here I was hoping this thread would have some inspiration for me to use chicken this week. Thanks mkvh, it's going on my menu for the week. Double nice that I have everything in the ingredient list!

Mo: Grilled lambchops, rice pilaf or cous cous, grilled asparagus, salad
Tu: Chicken, broccoli, ziti, salad
We: ham & cheese hand pies, salad or take out
Th: Thanksgiving
Fr: Leftovers
Su - On The Border
Mo - tortellini thing
Tu - beef & veggie stir fry, rice
We - ham, veggie rice, crescents

Fr - leftovers (I'll be wiped out from my marathon shopping)
Monday - Yogurt Marinated Chicken Pitas with Tzatziki and veggies, Couscous
Tuesday - Pizza on whole wheat crust with butternut squash, caramelized onions, and goat cheese, Green Salad

Thursday - Grilled Tilapia and Roasted Broccoli with Garlic and parmesan, Roasted Fingerling Potatoes
Friday - Acorn Squash and Chicken Chili, adapted for the crockpot
Saturday - Beer can chicken, Mashed potatoes, Salad
Sunday - Leftover Chicken Chili
Monday - Some soup made with the leftover chicken (suggestions welcome!)
Now that I look at this, there's a lot of chicken on here, but I guess it's been a while for us since we had a ton of fish over the summer.
