My MIL makes a great pasta salad that kids always seem to love. It’s Italian.
1 box short pasta (we use Campanelle)
4 or 5 fresh tomatoes
3 or 4 cloves of garlic
Handful of fresh basil leaves (5 or 6)
Grated Romano cheese
Extra virgin olive oil
Mince the garlic, chop the basil and dice the tomatoes. Mix all of those with just enough olive oil to coat it and add some salt and pepper. Let that sit to the side while you cook the pasta. When the pasta is done strain it and toss it with the tomato mixture, topping with the Romano cheese. It usually served room temp. It can be made to taste (less garlic, more garlic, more basil, etc)
rosa - you could do a dirt cake and instead of decorating with flowers and gummy worms, you could use toy tractors or dump trucks. I like the construction theme - I think there are a lot of games you could do with that as well!
maplekitty - I think the idea for the knights is really cute.
2 pkg Ramen Noodles (any flavor, but I use chicken)
1 bunch green onions or onion powder
1 16 oz package cole slaw or broccoli slaw
1 12 oz bag of sunflower seeds (can omit for toddlers)
Mix the above ingredients together. Save the noodle flavor packs.
Sauce:
2 Ramen Noodle flavor packs
1/2 cup sugar
2/3 cup oil
1/3 cup vinegar
Mix sauce together, it will thicken like syrup. Pour over dry mixture. Toss and mix well. Ramen noodles will soften as it sits with the sauce poured over it.
Since I got so much help from this thread I thought I would post a few pictures from DD 2nd birthday party that we held on august 9th. It was a backyard pool party theme of sorts.
I had my daughter's 3rd b-day party in July at a theme park so I didn't have to do much in the way of decoration but I wanted to post my invites in case anyone is looking for a cheap, easy invite idea for a theme park or carnival theme party. I did these in InDesign but you could easily do them in Word with minimal design skills:

I just sent out E-vites for DD's 2nd (very very belated) birthday party to be held in 2 weeks. It will be a princess theme.

I did a princess party for DDs 3rd birthday. You can see pics here. I shopped at Factory Card Outlet and got everything (paper goods, games, invites/thank you's, etc) for less than $100.

We did a construction themed party for our son's 2nd on August 9th. It was very low key - I didn't do half of what I wanted to, but the week OF his party we had to downsize due to dh's job situation, so my budget was minimal. We fed 20 people, did all decorations and all for $53. Hamburgers, Hot dogs, chips, baked beans with cake & ice cream. There was also a scheduling conflict - all our kids (all 3 of them!) had to leave within 90 minutes of the start time, so there wasn't time for games or cutesy things. I'm a little sad, but I did the best I could.
