I am looking for recipes that use a lot of fresh veggies. For instance, tacos. We fry up some meat with taco seasoning and then chop up lettuce, tomatos, onions, avacados, cilantro, etc. Put it in a tortilla and eat!
Now that it is summer, I want to eat more stuff like that. Iwant to try to make vietnamese spring rolls. I think you just make the rice noodles, then roll them up with carrots, cucumber, cilantro, red pepper, shrimp, egg etc in a rice wrapper. Then dip in some hoisin sauce? Any one have a good recipe? Or any good recipe that uses lots of fresh veggies?
Stir fry type dishes over rice or veggie quesadillas are my go-to lots of veggies things. We eat a LOT of stir fry w/ various sauces (some good ones at Trader Joe's), or things like veggie curry.
Pasta primavera...lots of fresh veggies and beautiful colors in that. Since the weather is warming up we do a lot of grilling. Try marinating and grilling your veggies...asparagus, peppers, zucchini, squash, portobellos, onions. Those are some of my favorites.
Grilled vegetables. I just salt them and grill them. Or you can salt, pepper, EVOO them then grill them and drizzle balsamic vinegar on them (this is fabulous with asparagus which is in season now).
Roast them. I like to toss veggies with EVOO, salt, fresh chopped basil and chopped garlic. This is great as a side or over pasta.
Omelets and crepes can be eaten basically the same way. Cook the veggies and toss them inside an omelet or crepe or make a frittata (basically scrambled eggs baked with said vegetables plus cheese).
Veggie burgers are really easy to make if you have a blender. All you need is a can of beans, vegetables, some cheese, an egg, and some bread (or breadcrumbs). Blend them all together and form patties to grill.

My mom and I make spring rolls every year. Love them!!! We brown ground pork, then add finely shredded cabage and carrots until they are soft then wrap them up. I'm not sure what the wrappers are called but I don't think they are rice. They are found in the produce section, usually near the bagged lettace and tofu items. We use the large size wrappers. Then we fry them in veg. oil. They also freeze nicely. They are great with hoisin sause, plun sauce or sweet and sour. We also make shrimp fried rice on the side.

Salads are one of my summer staples - you can add a meat (chicken, tuna, etc) if you wish, or just eat plain. I like my salads to have more than just lettuce, so things like avocado, brocolli, caulliflower, green peppers, red peppers, cucumbers, etc.
I also love zuchinni and squash in the summer. Cut them up, put them in foil and put them on the grill.
mmmm...grilled veggies! We do a LOT of salads in the summer months. Last year I really embraced the whole peasant salad (panzanella) with simple chunks of veggies, herbs, bread and a splash of olive oil and vinegar. So good and SO easy. There's a huge difference in taste though between fresh veggies (farmer's market, garden or produce stand) and store bought - and since the flavor all comes from the fresh veggies, not the dressing, trust me when I say you'll want the fresh stuff!
ETA: Mobox made an awesome stir fry the other night with fresh zucchini, mushrooms, onions and meat. It was quite simple and quick and very yummy!
