    We have several diabetics in our family, so we try to watch the sugar in just about everything. We have one staple we all adore, and it is so very simple, light and refreshing.


    French vanilla fruit salad w/angel food cake

    4 cans of fruit cocktail (in its own juice)
    1 can each of pineapples, peaches, pears, or whatever fruit you like best (in juice)
    1-2 boxes instant sugar free french vanilla pudding
    fresh apples, oranges, bananas
    nuts (walnuts, pecans or whatever you like) optional
    coconut (optional)
    mint (optional)

    In a large bowl, pour in all the cans of fruit w/juice. Add the boxes of pudding and mix mix mix. Chill for a few hours

    Right before serving slice your bananas and apples, so they don't get brown or soft and stir into your fruit salad. Serve in a pretty bowl and top with nuts, mint or coconut. The angle food cake is a good choice with this, as it is low in sugar too

    My suggestion is very similiar to fastlaynes.

    Banana Split Cake
    servings | 12

    1 Prepared Angel food Cake
    1 Package of fat-free, sugar free Jell-O Vanilla Pudding-Instant, prepared
    4 medium bananas
    4 cups of strawberries
    2 tubs of Cool Whip Free

    Prepare the pudding as directed on the box. Cut all fruit into bite sized pieces. Cut the angel food cake into bite sized pieces. Separate all ingredients in half. Layer ingredients in the following order: half of the angel food cake, half of the pudding, half of the bananas, half of the cool whip, half of the strawberries. Repeat the layer with the second half of ingredients. Enjoy

    Default Healthier Dessert Recipes: including lowfat/diabetic recipes

    Anyone got any? I did a search but didn't see anything. I am trying to watch what I eat but I am a big sweets fan and would like to find some healthier/lowfat recipes that I won't feel guilty eating.

    Right now I really want some Oatmeal Chocolate Chip Cookies! Does anyone have a recipe for those?

    I've got a recipe for a low fat cake that is SOOO GOOD and you can't tell the difference.

    1 Box Yellow Cake Mix (I think its pillsbury in a blue box) *Recipe should call for 1 cup water, three eggs, and 1/3 cup oil.

    Anyway, mix the cake mix with the water, 4 egg whites, and substitute the oil for unsweetened applesauce - 1/3 cup. Mix well and pour into two round 9" pans that have been sprayed with Pam. Cook for 20 min (or until toothpick comes out clean). Let cool. Ice with Cool Whip like you would a regular cake, don't forget to ice in between the layers.

    I swap out the oil in all boxed cake mixes with unsweetened applesauce. It works really good. It might even taste better than when made with oil. There's absolutely no way to tell that there's apple sauce in it. I would hesitate to take all the fat out (i.e. no eggs either) but if ManteoChik's recipe works than I'd swap out the eggs for egg substitute too. I usually still use regular eggs though.

    jenjunum: Do you do a 1 for 1 swap with the oil and applesauce?

    I did it once for brownies and you could not tell the difference, but I forgot the conversion. Thanks!

    I could also use some low fat dessert recipes because the 2 gooey brownies I have had every night this week aren't doing anything for my things!

    One thing I did that really helped me control sweets cravings after dinner was eat a few (small) york peppermint patties. They are low fat and the mint aftertaste makes me not want to eat anything else.

    Also, Kashi has really good oatmeal chocolate chip cookies that are lowfat and are a heathly choice.

    My big discovery this past holiday season was meringue cookies. They're nonfat (I garnish them with a few mini chocolate chips, which does add a trace amount of fat) and really delicious. Plus you can make them anytime - you just need egg whites, sugar and cream of tartar.

    Grape Salad

    INGREDIENTS
    4 pounds seedless green grapes
    1 (8 ounce) package FF cream cheese
    1 (8 ounce) container FF sour cream
    1/2 cup white sugar (Could use splenda)
    1 teaspoon vanilla extract
    4 ounces chopped pecans
    2 tablespoons brown sugar
    DIRECTIONS
    Wash and dry grapes. In a large bowl, mix together the cream cheese, sour cream, sugar and vanilla. Add grapes and mix until evenly incorporated. Sprinkle with brown sugar and pecans, mix again and refrigerate until serving.

    I saw this recipe in Health Magazine a couple of months ago and it looks delicious:

    Quick Baked Pears

    Ingredients:
    2 large Bosc pears
    2 teaspoons sugar
    1/4 teaspoon cinnamon
    1/4 cup dried cranberries or dried mixed fruit (such as Sun-Maid Fruit Bits)
    1/4 cup low-fat granola
    1/4 cup apple juice
    1/2 cup vanilla low-fat frozen yogurt, divided into 4 small scoops

    Instructions:
    1. Peel pears; cut in half lengthwise. Use a melon baller or grapefruit spoon to remove core and seeds, creating a hollow.
    2. Place pear halves, with cut sides up, in a glass pie plate. Combine sugar and cinnamon; sprinkle evenly over pears.
    3. Combine cranberries and granola; mound into hollows of the pear halves. Pour the apple juice in and around pear halves. Cover dish loosely with wax paper.
    4. Cook in microwave on HIGH 6–8 minutes or until the pears are tender when pierced with a knife. Let stand in the dish 5 minutes. Use a large slotted spoon to transfer the pears to serving plates.
    5. Drizzle juices from pie plate over pears and serve with frozen yogurt. (Serving size: 1 pear half with 1 tablespoon vanilla frozen yogurt and about 1 1/2 tablespoons juice)

    Calories 176 (8% from fat); Fat 2g (sat 1g, mono 0g, poly 0g); Cholesterol 16mg; Protein 3g; Carbohydrate 40g; Sugars 26g; Fiber 4g; Iron 1mg; Sodium 32mg; Calcium 78mg
