    Default Looking for a light dessert recipe

    I'm helping host a bridal shower this weekend and the theme is "something sweet" so we're having lots of desserts! I wanted to make at least one dessert that was a little lighter (and possibly even healthy?). I was thinking I could do some sort of trifle with fruit and light cool whip, and fat free pudding... but I don't really have time to experiment. Anyone have any good light dessert recipes?

    How about angel food cake (very low fat) with strawberries and light whipped cream. You can make the strawberries juicy by using Splenda instead of sugar.

    Or a fruit salad?

    either you could mix it up with cool whip or you can make a sauce that i sometimes use. the sauce is a mix of powdered sugar, vanilla yogurt, and orange juice.

    Similar to Kindermom's idea: I do Angel Food Cake (you can even do sugar free if you want). Then, mix a packet of dream whip with lemon instant pudding mix (it will tell you on the package how much liquid to use). After the whipped topping is mixed, fold in crush pineapple.
    Slice the Angel Food Cake into three sections. Put 1/2 of whip topping/pineapple mixture then top with cake layer. Repeat.

    Here's a recipe from Giada De Laurentiis that I've made a couple of times. It's really easy, and very light and delicious.

    Fruit Salad with Cannoli Cream
    serves 4

    1/3 cup whole milk ricotta cheese
    2 tablespoons plus 1/3 cup whipping cream
    3 tablespoons powdered sugar
    Pinch ground cinnamon
    12 ounces fresh strawberries, hulled, quartered (about 2 1/2 cups)
    1/2 dry pint fresh raspberries (about 1 1/4 cups)
    1 tablespoon sugar
    1 tablespoon fresh lemon juice
    2 kiwi, peeled, cut into 1/2-inch pieces
    3 tablespoons sliced almonds, toasted

    Stir the ricotta and 2 tablespoons of cream in a medium bowl to blend. Using an electric mixer, beat the remaining 1/3 cup of cream, powdered sugar, and cinnamon in a large bowl until semi-firm peaks form. Fold the ricotta into the whipped cream. Place in the refrigerator for at least 30 minutes to stiffen and yield a creamier filling. (Can be prepared 4 hours ahead. Cover and refrigerate.)
    Toss the strawberries, raspberries, sugar, and lemon juice in a medium bowl to combine. Let stand until juices form, tossing occasionally, about 15 minutes. Add the kiwi.

    Spoon the fruit mixture into 4 dessert bowls. Dollop the ricotta cream atop the fruit. Sprinkle with the almonds and serve.

    Great ideas! Thanks everyone! JamBray do you think the Fruit Salad with Cannoli Cream would still work if I made it all in a large serving bowl instead of individual bowls?

    Sure, I don't see why not. What you could do is make a separate bowl of the salad and then one of the topping (just keep it over ice).

    Default Healthier Dessert Recipes: including lowfat/diabetic recipes

    On Thanksgiving, we are having a pot-luck at work and I am supposed to bring dessert. I know several of the people I work with have diabetes. I was wondering if anyone had any ideas for a dessert that might be appropriate for diabetics. I'm absolutely clueless about this, and I don't want anyone to have to go without dessert on Thanksgiving because of me. TIA for any suggestions and/or recipes!

    Thanks for all the great suggestions. I think I'm going to try the chocolate berry dessert and hte lemon mousse for those that don't care for chocolate. I appreciate your taking the time to post all those links!
