I am wanting to make goodies to send to friends and family this year but my dad has type 2 diabeties and was recently put on insoline so I know he isn't controling his surgars well. I don't want to send my parents stuff that dad can't have and was wanting to make some diabetic friendly treats especially for him. I was wanting to do fudge and cookies this year, anyone have a good diabetic fudge or cookie recipe? I am getting nowhere fast trying to google it.
My dad and best friend are both diabetic and we use these recipes during the holidays: Sugar Free Fudge Recipe
Ingredients
16 ounces cream cheese, softened
2 unsweetened chocolate squares (1ounce each) melted and cooled
1/2 cup sugar substitute (aspartame sweetener)
1 tsp vanilla extract
1/2 cup chopped pecans
Instructions
In a small mixing bowl, beat the cream cheese, chocolate, sweetener and vanilla until smooth. Stir in pecans. Pour into 8-inch square baking pan lined with foil. Cover and refrigerate overnight. Cut into 16 squares. Serve chilled.
Yield: 16 servings
Per (1-Square) Serving:Ê 147 Cal; 14 g Total Fat; 5 g Carb; 31 mg Cholesterol; 84 mg Sodium; 3 g Protein.Ê Exchanges: 3 Fat
Gingerbread Cookies
Makes: 4 ½ dozen (2 inch) cookies
Preparation Time: 30 minutes
Chill Time: 1-2 hours
Bake Time: 8-10 min.
6 cups All Purpose Flour
1 tsp. Baking Soda
1/2 tsp. Baking Powder
4 tsp. Ground Ginger
4 tsp. Cinnamon
1 1/2 tsp. Ground Cloves
1 cup Unsalted Butter, softened
1 cup SPLENDA® Granular
1 tsp. Salt
2 Eggs
1 cup Molasses
3 Tbsp. Water
Blend together flour, baking soda, baking powder, and spices in a large mixing bowl.
Cream butter, SPLENDA® Granular and salt together in a large mixing bowl. Add eggs one at a time, beating well after each addition. Add the molasses and water. Stir well. Add the flour mixture and stir until well blended. Refrigerate dough 1-2 hours before rolling out and cutting into shapes.
Preheat oven to 350° F. Roll cookie dough out slightly less than 1/4 inch. Cut into desired shapes. Bake in preheated oven 8-10 minutes or until lightly browned on the bottom.
Garnish
30 hard sugar free peppermint candies, very finely crushed
MIX together butter, melted chocolate, and SPLENDA® Granular in a medium mixing bowl with an electric mixer. Blend well.
ADD egg substitute and mint extract. Mix briefly. Add remaining ingredients. Mix using low speed (or by hand) until dough is formed. Do not over mix.
REMOVE dough from bowl and divide in half. Chill dough in refrigerator 30 minutes. Preheat oven to 350° F.
ROLL out chilled dough onto a floured work surface. Roll dough slightly less than 1/4 inch thick (dough puffs slightly while baking).
CUT dough into small 1-inch circles. Place on lightly oiled cookie sheet. Bake in a preheated 350°F oven 7-9 minutes. Cool.
BLEND filling ingredients together. Set aside.
SANDWICH the cookies with 3/4 teaspoon filling. Press together lightly. Spread any excess filling from the interior of the cookie around the outside of each cookie. This will help the crushed peppermint candies stick to the outside of the cookies.
ROLL cookies in crushed peppermint candies, so that the sides of each cookie are completely coated. Chill until ready to serve.

My dad has Type 2 diabetes, and has found that the boxed gingerbread mix is low enough in sugar that he can eat that. I know the box has a gingerbread cookie recipe. Maybe something like that?
My mom regularly substitues Splenda for sugar in all of her regular cookie recipes. Oh wait, maybe she does part Splenda and part regular sugar. I'll have to check.
If you don't have to ship them, my mom swears by cream puffs. She just makes a regular pax de choux (sp?), bakes it, and uses sugar free pudding and homemade whip cream made with Splenda as fillings. My dad loooooves them!
Thanks ladies. I will definately be making that fudge, I know dad will love that. I thought about just using splenda in some of my cookies that I want to send but wasn't sure about the flour. I guess dad can have the cookies in moderation. I unfortunately do have to ship them which is why I need to get on the ball. I will probably be overnighting them. Luckily I am only shipping to four addresses, the rest are local.
I just realized, can I make that fudge and ship it? It is mainly cream cheese and looks like it needs to stay refrigerated.
Hmmm...I am really not sure about mailing the fudge. A big part of me says that mailing might not be the best but another thinks that it would be ok. Wish I could be of more help.

I thought about just using splenda in some of my cookies that I want to send
mortiz, I know that my Mom has had varied luck on substituting Splenda for Sugar in some of her recipes. If you go to the Splenda website, there should be some explanation on how to substitute. As well, I think they have a whole section for recipes.
