I know I've seen this thread on the WC, but couldn't find one here. We got married yesterday and I'm getting ready to freeze the top layer. What is the best way to do that???

Wrap it up several times in good quality plastic wrap, then another couple of layers of tinfoil, then in a freezer ziploc bag.

I wish I had some advice for you on the cake...no our anniversary, ours tasted like total crap! I still cannot believe I ate something that was a YEAR old!:eek: I have to say - I don't think we wrapped it right!

Kristi - Ditto what Maplekitty said about the cake. It might also help to stick it in the freezer for a little bit before wrapping it though. To firm up the icing so that it looks the same in a year. And when you wrap with the plastic wrap, make sure to do it nice and tight, the less air the better. A few layers of that, plus a few of aluminum foil, and you are good to go. DH and I didn't put ours in a plastic bag and it turned out fine, but if you feel more comfortable with another layer do it. Also do it if you usually keep fish and seafood in the freezer. Anyway, CONGRATS!!! :D Have you updated your journal? I can't wait to hear about how the Big Day went.

If you have a vacum sealer. Place the cake in the freezer for about an hour. Then vacum seal it in a bag. That is the most effective way. The second best is freeze cake for about an hour then wrap in plastic wrap as tightly as possible, then cover with aluminum foil and then place in a freezer bag and try to remove as much air as possible.
Always store as far back as possible so it wont get a big temp change as the door is opened and closed.
MAke sure you give it lots of time to defrost.
It will never taste the same but for a few bites it will be OK.

Wrap in a few layers of plastic wrap, then put in a Tupperware container. My mother saved our cake this way, and it really was just as good as at the wedding. I was really surprised lol.

I was advised against keeping it for at year as well. Everyone says it tastes like crap.
We had a bite of it the next night (we didn't go on our HM until Monday), then we wrapped it in tinfoil and put it in a freezer bag and froze it while we were on our HM, then ate it when we got back.
We plan on trying to have a replica of the top made for our 1 year anniversary.

I like the idea of having a replica made for the anniversary. It's nice that some bakeries are even adding this in as an option with their wedding packages.

so..................how do you thaw the cake to eat on your anniversary?
We wrapped the sucker so many times in plastic wrap I am sure we will have to fight to even get it out....but do we just take it out and let it sit on the counter....or what?
(I also put it in a freezable container just so it stays in its proper shape.)

While away on our Honeymoon, my mom wrapped it in saran wrap totally - just one round. Then she sucked all the air out with a straw (just like a food saver would do). She then wrapped it in foil placed in in the box the baker gave us and it sat for a year in the fridge.
We let it sit out 2 days before - completely wrapped still and had a nice, room temp cake for our anniversary. It tasted JUST as good then as it did the wedding day!! I LOVED it.
