I did not see a thread for this! I need some new Ideas.

Last night: Chipotle Maple Mop Pork Tenderloin

Pork:
2 teaspoons ground coriander
1 teaspoon garlic powder
1/2 teaspoon ground ginger
2 pork tenderloins, each about 12 ounces, silver skin removed
1 tablespoon vegetable oil
Kosher salt
Freshly ground black pepper
Sauce:
1/4 cup pure maple syrup
2 tablespoons sherry vinegar
2 teaspoons chipotle chile hot sauce
1/2 teaspoon kosher salt


Position a rack closest to the broiler and preheat to high. Combine the coriander, garlic powder, and ginger. Brush the tenderloins with the oil and rub all over with spices. Season with salt and pepper, to taste. Lay the pork on a small shallow pan and broil until golden, turning once, about 5 minutes per side. (An instant-read thermometer should register 130 degrees F when inserted into the thickest part of the meat.)
Meanwhile, for the sauce: Whisk the syrup, vinegar, hot sauce, and salt together in a small bowl. Set about half the sauce aside. Generously brush the tenderloins all over with the remaining sauce. Return to the broiler and cook, turning once, until a deep rich brown, about 2 to 3 minutes. Set meat aside for 5 minutes to rest before slicing. Serve with reserved sauce for drizzling over the meat.


Cook's Note: Be sure to remove the silver skin before cooking the tenderloin; otherwise, the meat will curl.
1. Lay the tenderloin on your work surface and slip a sharp knife under the surface of the silver skin. Keeping your knife flat against the meat, make your first cut by slicing away from you and toward the end of the tenderloin.
2. Lift the unattached portion of the silver skin up and place your knife at the point where the skin meets the tenderloin. Slice to separate.
3. Continue moving down the length of the tenderloin, pulling and slicing until the silver skin is completely removed.

Chicken and Dumplings, one of my favorites. Oh, and for dessert Pumpkin Spice Cake w/ cream cheese icing. It was my first every cake "from scratch" and it was really good.

Last night it was Butternut Squash soup with garlic bread and a green salad. Dh cooked and it was so good.
He left town so tonight it'll be grilled chicken and cookie dough.;)

We just had Tortellini & chicken w/Vodka Sauce :D

The Vodka Sauce was Emeril's. I picked it up on a whim (it was on sale) and it was actually quite good! We also love Emeril's Sicilian Gravy. I was raised on homemade gravy (sauce) and if I don't have time to make my own, this is my favorite!

Tonight we'll be eating late so I want something quick: Roaster chicken from Costco, Prig Khing Green Beans from Trader Joe's.

INGREDIENTS:
6 tablespoons chopped onion
4 tablespoons margarine
6 cups peeled and cubed butternut squash
3 cups water
4 cubes chicken bouillon
1/2 teaspoon dried marjoram
1/4 teaspoon ground black pepper
1/8 teaspoon ground cayenne pepper
2 (8 ounce) packages cream cheese

--------------------------------------------------------------------------

DIRECTIONS:
In a large saucepan, saute onions in margarine until tender. Add squash, water, bouillon, marjoram, black pepper and cayenne pepper. Bring to boil; cook 20 minutes, or until squash is tender.
Puree squash and cream cheese in a blender or food processor in batches until smooth. Return to saucepan, and heat through. Do not allow to boil.

Monday night I made these Italian Mini Meatloaves (http://www.foodnetwork.com/food/recipes/recipe/0,1977,FOOD_9936_28401,00.html) and served them with mashed potatos and blanched broccoli. That was good for lunch leftovers on Tuesday as well.

Tuesday night (so last night) I made this Mild Coconut Curry Tofu (http://constantchatter.com/showpost.php?p=75047&postcount=12) that I found on the Lacto-Ovo thread but we didn't enjoy it at all. It was tasteless. I served it with jasmine rice.

Tonight I am making this Vegan Black Bean Soup (http://vegetarian.allrecipes.com/AZ/VgnBlckBnSp.asp) that I found on allrecipes. I've never had Black Bean Soup so I hope I like it. I don't know what to serve with it... maybe salad?

Last night, I braised chicken breasts in a shallot caper sauce. I served it with egg noodles and pan-roasted brussel sprouts.

I had chicken, mushroom and white rice bake with squash. Here is the recipe if anyone wants it:

2 cans of cream of mushroom soup
2 can of milk
Mix both together and reserve one cup of mixture.
After one cup is removed, add to milk and soup mix:
1.5 cups of white minute rice
1 envelope of lipton onion soup mix
Stir together and pour into 13x9 dish
Add to 13x9:
2-3 boneless chicken breast
Pour one cup of reserved mixture over chicken breast and sprinkle half of the envelope of lipton onion soup mix over the chicken breast too.

Bake at 350 for 45 minutes. Cover for the first 30 minutes and uncover for the last 15.

We had grilled rib-eye steaks with a peppercorn crust, homemade steak fries, and a lovely bottle of Toasted Head Cabernet Sauvignon. It was fantastic, if I do say so myself! (And very simple too!:) )

We had baked chicken legs in creamy tomato sauce, herbed rice and steamed green beans.

The chicken legs were something I threw together at the last minute: chicken legs with cream of chicken soup, tomato sauce and dashes of worcestershire sauce. All into a 350 degree oven for about 50 minutes, came out tasty and it was quick.

We had chili and cornbread. Yum and great for the dreary, cold weather. I made it with some Italian sausages from Trader Joes instead of ground beef and we really liked it that way.

Mom to zoe - do you have a recipe for the chicken braised in shallot and caper sauce? Sounds wonderful.

leftover turkey baked into a casserole. very 1950's domestic, i know. basically, i mixed together: a pound of cooked egg noodles, a 10-oz brick of frozen peas (defrosted), some shredded up turkey, 1/2 lb sliced mushrooms, chopped carrots, chopped onions, a can of cream-of-mushroom soup, and some milk. then i stuffed it into a baking dish and topped with cheese. bake at 350 for 20-30 min, and there you have it. nothing fancy.

Yesterday was Yom Kippur so we had my husband's family over for dinner. We had bagels with lox, spinach salad with walnuts and raspberries, shrimp cocktail (we aren't kosher), and crepes with ice cream and chocolate ganache drizzled on top.

Crepes are my new favorite dessert to make. They are very easy and you can top them with anything. Yum!

We never really had dinner tonight. While backstage at the concert, I had a rum & coke when we got there and then throughout the night I nibbled on three slices of cheese and handful of cookies. Richard had about 4 beers, quite a few cookies, some chips & salsa, and a slice of bread with a slice of ham & a slice of cheese. Then back at the Four Seasons hanging with the bassist, Richard had another beer, while I chugged another cranberry juice (damn UTI and the fact that someone still had to drive home - those martinis sounded SO yummy!) :mad:

I have to say though...once the show was over and the catered food came out, it was SO hard not to just dig in. But since we had NOTHING to do with the show, we just didn't feel right munchin' down. But that BBQ chicken sure did smell goooo'od

Needless to say, I'm pretty sure we'll both be starving hungry when we get around to waking up (yikes, it's 4:00am already!!!)

Instead of making the enchiladas we ended up broiling veggie burgers, and pouring the chili over those. Corn on the cob for a side.

I need to branch out with my cooking skills :)

Leftover roast chicken from Tuesday night with roasted potatoes and brussels sprouts. I have gotten really good at this meal - I brine and butterfly the bird, stuff lemon, garlic and rosemary under the skin and roast at 450 for 1 hr. The potatoes I cut in half and cook alongside the chicken with the brussels sprouts thrown in for good measure. It takes about 1/2 hr to assemble not including the brining.

tonight is 5-can soup with some kashi bread

tomorrow will be a bacon and potato omelette

I made a cream sauce with chicken, mushrooms and sundried tomatoes.

It was pretty good...I like just making recipes up, and throwing in things I think will taste good together. So far so good ;)

Last night was Chinese food. But the night before I made shrimp masala -- Sauteed onions in a little butter, added a jar of Trader Joe's masala simmer sauce, some frozen peas, some cashews, and some Trader Joe's frozen shrimp. Served over basmati rice flavored with a little saffron.

Could you please post the recipe for your spicy garlic shrimp? Sounds great!

Here you go! It's so easy to make and l usually add some red and green peppers. I usually serve it with rice or couscous. Here is the recipe:


2 tablespoons extra virgin olive oil, 2 turns of the pan
4 cloves garlic, crushed away from skin
1/2 teaspoon crushed red pepper flakes
24 jumbo shrimp, peeled and deveined, tails in tact,
2 teaspoons grill or steak seasoning blend (recommended: Montreal Seasoning by McCormick) or coarse salt and pepper
1 lemon, zested and juiced
2 tablespoons chopped parsley leaves, a handful


-Heat a large skillet over medium high heat.
-Add extra-virgin olive oil (2 turns of the pan), garlic, red pepper flakes and shrimp.
-Season with grill seasoning or salt and pepper and cook shrimp 3 minutes or until just pink.
-Toss with lemon zest, juice and chopped parsley.
-Remove shrimp to a serving platter leaving the garlic cloves in the pan.

Roast Chicken

Oven at 450

Roasting pan with rack at the ready

1. Butterfly the bird by cutting out the spine and flattening with your hand.
2. Brine in 1/2 c kosher salt to 2 qts water for 1/2 hr in the fridge (truthfully, sometimes I can't be bothered to clear space in the fridge so I just use cold water)
3. mince - lemon rind, rosemary, garlic (sage woyld also be good - I use rosemary because it's in the garden)
4. rinse off the chicken and pat it dry and loosen the skin. stuff the flavorings under the skin and salt and pepper the bird.
5. put the chicken on the rack as flat as possible
6. slice potatoes in half long ways - the larger the cut side, the larger the crispy deliciousness of potato. mix in bowl with olive oil, salt and pepper. place in roasting pan cut side down.
7. cook 45 minutes, then start testing temp of chicken
8. Let sit before cutting it up

I also throw in other veggies that like to be roasted - brussels sprouts this last time.

Last night's dinner - chicken shnitzel but with B/S thighs - so much better than breasts, and no need to pound them. salad.

Last night we were late and didn't feel like doing much, so we did pierogies (frozen from a box) and broccoli (frozen from a box)! :)

So i had these wasabi peas, and i decided to make an asian inspired crust for the salmon. I ground them up in the food processor, and then topped the salmon filets with it. A drizzle of olive oil and a squeeze of lemon, and yummmmm! baked red potatoes and roasted mashed eggplant alongside.

I'm new to menu planning so I think it's good for me to document what I'm actually eating.

Last night, I had planned on having cheeseburger noodle casserole but I decided yesterday that it didn't sound good to me. So we had leftover chili and it was great! I served it with crusty bread and a bunch of toppings. I had made a giant batch a few weeks ago and just froze the leftovers.

Tonight, we're shopping for a dining room table so we're eating the Trader Joe's Cheese Enchiladas and will likely have chips and salsa as a side.

I'm trying to be more creative. Here's what I made Wednesday and ate the leftovers last night.

-cut up cooked chicken
-can of diced tomatoes (rotels would be better, but I didn't have any)
-dice up a few nacho jalapenos
-can of corn

Put in the croc pot and let heat up.
Then I used Guerrero's premade tortillas-just throw them on a skillet for 10 seconds to cook-and layer the chicken mix with some cheddar cheese. I made quesadillas and served with sour cream and salsa. YUM!

Big spinach salad with boiled chicken breasts shredded, shredded colby jack, tomato, black olives, hardboiled eggs and Ranch dressing.

Tonight:

Hot Chicken Salad (courtesy of Paul Deen)

2 cups cooked chicken breast meat, cubed
1 cup diced celery
1/2 cup slivered almonds
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons fresh lemon juice
1 cup mayonnaise
1 cup grated sharp Cheddar
2/3 cup crushed potato chips

Preheat oven to 350 degrees F. Spray a 13 by 9-inch baking dish with vegetable oil cooking spray.

With a side salad of spinach, olive and tomato with Ranch dressing.

Homemade creamy tomato basil soup and my made-up riff of the Thin Crust Tarte d'Alsace (www.traderjoes.com/fearless/DC.pdf) that I saw at Trader Joe's last night when I was grocery shopping. I just got an immersion blender and was dying to use it on some soup. I love it!

The tart (not sure why they call it a tart it's really more like a thin crust pizza) was so good and I am going to make a few variations of it for our upcoming wine tasting party. I bought one of their ready to use pizza doughs, divided it in half, and used one half to roll out two "tarts". I lightly sprinkled the tarts with olive oil and baked them on a pizza stone until they started to brown. Then I topped them with a bit of creme fraiche, a bit of shredded mozzarella cheese and gruyere, and put some serrano ham slices on top. I was too lazy to make caramelized onions but I'm sure that would have been good also. I popped the tarts back in the oven until the cheese started to brown. So good!

Since I was a dumbass and forgot to plug the crock pot in yesterday morning (:( ), we had to re-adjust our plans. So, we had breakfast for dinner. :) We haven't done that in so long and it was so good. I am also a food dork and was really excited to try Niman Ranch bacon that I found at Trader Joe's.

We had eggs over medium, Niman Ranch bacon, hand-cut hash browns, and wheat toast. We also had some leftover sparkling cranberry juice from Trader Joe's, so we mixed that with some cava. It was a great combination.

I checked that freaking crock pot about 4 times this morning before I left for work. Hopefully the pork tenderloin in it will come out well.

Tonight is going to be a mess I think because we are trying to get ready for our party this weekend. We will probably be eating the Chex Mix that I made last night for dinner. Yeah, real healthy. :rolleyes:

SPICY CHICKEN & SPINACH CASSEROLE
3 cups cooked, diced chicken
10 ounce package frozen chopped spinach, thawed and drained well
1 small onion, chopped
1 tablespoon butter
1/4 cup canned pickled jalapeños, roughly chopped, 1 ounce can
8 ounces cream cheese, softened
1/3 cup sour cream
10 ounce can Ro-tel tomatoes, drained (tomatoes with green chilies)
1/4 teaspoon cumin
1/2 teaspoon chili powder
8 ounces cheddar cheese, shredded

Mix chicken and spinach in a greased 2 1/2 quart casserole. Meanwhile, sauté the onion in butter until tender; add to chicken. Stir in all remaining ingredients and mix well. Season with salt and pepper, to taste. Bake, uncovered, at 350º 40-50 minutes, until hot and bubbly.
