I'm currently eating a chilaquile. I just picked it up -- it was a daily special at a coffee house and YUM! I can not believe how good it is. So now I want a recipe!!
This one looks like it has tortilla shells, cheese, balck beans, spinach (maybe?) corn, tomatoes, onions and green peppers. I found some recipes online, but if anyone has a tried and true recipe, I'd love to have it!

I made this recipe (http://www.foodnetwork.com/food/recipes/recipe/0,,FOOD_9936_27721,00.html)from FoodTV and we really liked them. I've never had a full-fat chilaquile, so maybe I don't know what I'm missing.

I made the same recipe as Seb's Kitty and liked it very much (must make again soon). I believe I ended up adding more seasoning to the meat (tasted bland at first--my spices may be old), and used sour cream in place of 1/2 of the cream cheese.
Anyway, I thought it was *really* good (have also never had a full-fat one, though).
One note, this recipe does not freeze well. You might guess that from the ingredients, but I tried it anyway. Blech. At least it was only a couple of portions that were wasted...

I usually saute garlic & onions in oil. pan fry cut up old tortillas in the oil unti wilted. Add salsa and chiles and fry for a little longer until they tortillas are golden. Then I grated queso anejo and bake at 350 for about 20 minutes - I like the tortillas really crispy.
to garnish: I'll add some diced green onion, fresh tomato and a little more cheese.
You can add black beans and corn to this too if you want. You can add practically anything to chilaquiles.
