Anyone have a good recipe for chili? I'm looking for a good one involving sirloin or stew meat. NOT a ground beef recipe, as I have a recipe for that type of chili already.

The latest issue of Southern Living has a pretty good one. I will try to find it and post it. I am using it at a party this weekend and have already tested it out.

Going to a "chili" cookoff...we are the reigning champs, so I got to make something good.

Sorry, I'm not any help. Just subscribing. I love green chili. I have never heard of a green chili chili. I, too, would be very interested to see one if anyone has a recipe to share.

Here's my recipe.
flour and Brown 2 lbs of cubed pork shoulder. Add a chopped onion, a couple garlic cloves, 2 finely chopped jalapenos, 2 cans of La Victoria Green Enchilada sauce (or more if you want it soupier) and a handful of fresh chopped cilantro.
Simmer it for at least 3 hours or until the meat is totally tender.
This is even yummier if you make it the night before and then reheat it.

Anyone have a good chili recipe? I make pretty good chili but I always wing it, as far as amounts and stuff, I'd like to see how others make it.

Our family recipe is in my food blog, linked below. Basically this is it:
1 lb ground beef (or ground turkey)
1 med onion, chopped
1 clove garlic
1 6oz can tomato paste
1 T chili powder
1 t cumin
1 t worcestershire sauce
1 t vinegar
1 whole dried chile
8 whole allspice
1 bay leaf
4 cups of water
2 cans pinto beans, drained
Brown the meat in the bottom of a large pot. When almost done, add the chopped onion and diced garlic and cook until onion is translucent. Add the tomato paste, chili powder, cumin, worcestershire, vinegar, and water. Put the dried chile, the allspice, and the bay leaf in a spice ball and add to the pot. Bring to a boil and then lower to a simmer for an hour. Remove the spice ball. Add the cans of beans and heat through.
I usually double this recipe by using 1 lb of ground beef and 1 lb of ground turkey. Also if you double it, the beans don't exactly double. You add one can of beans for each lb of meat, plus one can for the pot. So if you double it, add three cans of beans. You can also make it spicier by adding more dried chiles to the the spice ball or less spicy by using only 1/2 a chile.

Our favorite is Alton Brown's Pressure Cooker Chili (http://www.foodnetwork.com/food/recipes/recipe/0,1977,FOOD_9936_28231,00.html). It's really really yummy. It can be made w/o a pressure cooker. Today I'm trying vegetable and bean chili (http://www.epicurious.com/recipes/recipe_views/views/102739?id=102739) after rave reviews on another board.
I totally wing it...
* ground meat (turkey or beef)
* two cans of kidney beans (or sometimes black beans)
* one or two cans of diced tomatoes (green chile and fire roasted usually)
* sometimes I add veggies - green peppers, onions, mushrooms, diced zucinni
* one packet of chili seasoning
* additional spices as the mood strikes - italian seasoning, red pepper flakes, cummin, garlic
When all is said and done, I let it simmer down and then we bowl it up (sometimes with rice) and top with cheese. Yum!

This is such an easy recipe.
beef (I use diced beef, but you can use ground beef if you want)
1 jar salsa
1 can kidney beans
chili powder to taste
Brown beef. Add salsa, beans, and chili powder to taste.
I know it sounds weird to add salsa, but the salsa has all the seasonings in it that you need and the finished recipe tastes like chili - not like salsa.

We made this chili tonight, and it was really good! I got it from AllRecipes.com.
INGREDIENTS:
1 pound ground beef
1 onion, chopped
1 (14.5 ounce) can diced tomatoes
1 (15 ounce) can tomato sauce
1 (16 ounce) can dark red kidney beans
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 teaspoon ground cayenne pepper
1 teaspoon minced garlic
DIRECTIONS:
In a large saucepan over medium-high heat, cook beef and onion until meat is no longer pink. Stir in tomatoes, tomato sauce, beans, chili powder, cumin, cayenne and garlic. Cover, reduce heat and simmer 20 minutes.
Makes about 3-4 bowls. The lady who posted the recipe says to make a double batch, double everything except meat and onion.

Since my DH won't eat "regular chili," (ie. kidney beans, tomato sauce, etc), we tried a new recipe this week- Mexican Black Bean & Sausage Chili from Cooking Light- it was a hit!
Note: I didn't use all of the water/broth indicated (looked like too much liquid for me) and just shortened the simmering time at the end. Enjoy!
Mexican Black Bean Sausage Chili
You may need to thin the chili with water if you've made it ahead. Or combine the sausage ingredients in advance, and finish the chili later.
Sausage:
1 1/2 tablespoons Hungarian sweet paprika
2 tablespoons minced garlic
3 tablespoons dry red wine
2 tablespoons sherry vinegar
2 teaspoons ancho chili powder
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/2 teaspoon ground coriander
1/2 teaspoon black pepper
Dash of kosher salt
3/4 pound lean ground pork
3/4 pound ground turkey breast
Chili:
2 tablespoons olive oil
2 cups diced onion (about 2 medium)
1 tablespoon ground cumin
1 tablespoon finely minced garlic
2 teaspoons dried oregano
3 canned chipotle chiles in adobo sauce, minced
4 (15-ounce) cans black beans, rinsed and drained, divided
3 cups fat-free, less-sodium chicken broth, divided
3 cups water
2 (14.5-ounce) cans no salt-added diced tomatoes, drained
1/4 cup freshly squeezed lime juice
1/4 cup very finely chopped cilantro, divided
Low-fat sour cream (optional)
Sliced green onions (optional)
To prepare sausage, combine first 12 ingredients in a large bowl. Cover and refrigerate overnight.
To prepare chili, heat oil in a large saucepan over medium-high heat. Add sausage mixture; cook 7 minutes or until browned, stirring to crumble. Add onion, 1 tablespoon cumin, 1 tablespoon garlic, 2 teaspoons oregano, and chiles; cook 4 minutes or until onion is tender. Place 1 1/2 cups black beans and 1 cup broth in a food processor; process until smooth. Add puréed beans, remaining beans, remaining 2 cups broth, water, and tomatoes to pan; bring to a boil. Reduce heat, and simmer, partially covered, 45 minutes or until slightly thick. Stir in juice and cilantro. Ladle about 1 3/4 cups chili into each of 6 bowls. Garnish each serving with sour cream and sliced green onions, if desired.
Yield: 6 servings

My husband loves chili, and I am looking for an easy chili recipe. Anyone have any? Canned tomatoes and beans are fine, btw.

This recipe (http://soup.allrecipes.com/az/MyChili.asp) is super-easy, nothing fancy, and totally yum. I always halve it and, after the ground beef is browned, throw it in the crock pot. It also freezes really well, so you can have it for another time (because it makes a LOT). We sprinkle some shredded "Mexican" blend cheese on it and call it a day. :)
