I've heard it called Sweet Potato Casserole and Sweet Potato Souffle. I'm looking for wonderful tried and true recipes. I have no preference- it can be with or without marshmallows or pecans. ;) Please share!

I actually just made this yesterday and am sitting here at the computer eating leftovers :) Yummy!
Here's my recipe:
Sweet Potato Casserole
3 c. mashed sweet potatoes
1 1/2 c. sugar
1 stick melted butter
1 t. vanilla
1/2 c. milk
dash of cinnamon
1 egg
Topping:
1 c. brown sugar
1/2 c. flour
1 c. chopped pecans
1 stick melted margarine
Spread crumbly topping over casserole and bake for 20-30 minutes at 350 degrees!
I personally added the cinnamon to the recipe, and it suggests adding coconut, which I didn't do b/c DH hates coconut. This was really sweet but really good. I threw it all in my Kitchenaid and it took about 5 minutes to fix!

I have the same recipe mrstim posted. It is wonderful, and it's always scarfed up at Thanksgiving. Mmmmm...

I have the same recipe, except I add a little bourbon or rum extract to the sweet potato mixture. It makes them taste sooooo good!

I also always add coconut to the crumble on top.
This is the recipe I make:
INGREDIENTS:
4 cups mashed sweet potatoes
1/2 cup white sugar
2 tablespoons vanilla extract
4 eggs, beaten
1/2 pint heavy cream
1/4 pound butter
1 cup packed brown sugar
1/2 cup all-purpose flour
1 1/4 cups chopped pecans

DIRECTIONS:
Butter one 2 quart casserole dish. Preheat oven to 350 degrees F (175 degrees C).
In a mixing bowl, combine the sweet potatoes, sugar, vanilla extract, eggs and cream. Blend well, and spread evenly in casserole dish.
Prepare the topping by combining the butter, brown sugar, flour and pecans. Mix until crumbly, and sprinkle over sweet potato mixture.
Bake for 30 minutes in the preheated oven.

Forgive my stupidity...
What do you ladies do about the mashed sweet potatoes? Do you buy sweet potatoes, cook them, then mash them? Do you buy the circular, frozen sweet potatoes? Or, do you use canned?
I've never cooked sweet potatoes before, so I am clueless. :o

Buy them, score the skin in a few places, then boil them. When you take them out of the water, the skin can be pulled off. Then mash them. :)

I also use that first recipe and have gotten so many compliments on it! You hardly even need to add any sugar since the sweet potatoes are so sweet.
I buy fresh sweet potatoes (I try to buy fresh when it is easy to prepare) and cut them lengthwise and then place them onto a baking sheet and bake them at 350 for about 40 minutes. I just take them out of the oven when they can be easily pierced wtih a knife. Let it cool and then scoop out the sweet potato.
I buy fresh yams and cut them up, then boil. I let them cool and then mash.

What most people call sweet potato is actually a yam.

:) Good Luck! If I wanted to put marshmallows on top, when would I do that? Would they burn if I put them on before cooking? Should I add them toward the end?

JRPAGV, that recipe is the one I make every year, and I’m not sure how good it would be with marshmallows on top. It’s really, really sweet – like, sweet enough to serve for dessert – and the marshmallows might be too much. The crumbly topping browns really nicely and has a pretty, praline look to it, which you’d lose if you topped it with marshmallows.
If you really wanted to add the marshmallows, maybe you could just add them at the end…? I don’t really know, as I never bake my sweet potatoes with marshmallows on top.

I always heard of putting marshmellows on first - then they begin to brown. If the casserole isn't done before the top browns, put a piece of foil lightly on top and it will cook the dish without browning any more :)

Thanks, ladies! Last question... I noticed that the mixture calls for butter, but the topping says margarine. Does it matter which one it is? Can they both be butter?

I got this from a friend last year:
SWEET POTATO CASSEROLE
Serves 8 to 12
If you can find sorghum, a sweetener popular in the deep South, substitute five tablespoons of it for the combined honey and molasses.
3 pounds (about 6 medium) sweet potatoes, peeled, halved lengthwise, 1/4-inch slices
6 tablespoons unsalted butter, melted
2 tablespoons honey
3 tablespoons molasses
1 tablespoon grated fresh ginger or 1 teaspoon powdered
3/4 teaspoon salt
1/4 teaspoon cayenne pepper
1 1/2 tablespoons cornstarch
1. Adjust oven rack to middle position and heat oven to 375 degrees. In large pot or Dutch oven of boiling water, parboil sweet potato slices over high heat until they are bright orange and the point of a paring knife easily pierces but does not break apart a few slices, 4 to 5 minutes. Drain potatoes well and turn into buttered 13-x 9-inch baking dish
2. Whisk melted butter, honey, molasses, ginger, salt, and cayenne in small bowl; set aside. Mix cornstarch with 2 tablespoons cold water in small bowl until totally smooth, then whisk into butter mixture; pour over sweet potatoes and toss to coat well.
3. Cover dish tightly with foil and bake until liquid is bubbly, about 50 minutes. Remove foil, stir potatoes gently, and bake until liquid thickens to glaze potatoes, about 20 minutes longer. Cool slightly and serve hot or at room temperature.
MAPLE SWEET POTATO CASSEROLE
Follow recipe for Sweet Potato Casserole, substituting maple syrup for the honey and molasses.
ORANGE SWEET POTATO CASSEROLE
Follow recipe for Sweet Potato Casserole, adding 4 teaspoons finely grated orange zest to butter mixture.
LEMON-BOURBON SWEET POTATO CASSEROLE
Follow recipe for Sweet Potato Casserole, adding 3 tablespoons fresh lemon juice to butter mixture and substituting 1/4 cup bourbon for water in cornstarch mixture
I made the maple syrup one last year it was yummy!

My friend swears by her recipe. I am using it this Thanksgiving for the 1st time:
4 cups sweet potatoes mashed (3 28oz cans- liquid
poured off)
8oz. cream cheese softened
1/2 cup butter softened
2 egss beaten
1/4 cup brown sugar
1/2 tsp. nutmeg (I always add more)
Preheat oven to 350
Beat all ingredients until smooth
Pour into buttered casserole dish
Bake 45 min
Enjoy :D

Thanks for the replies, ladies! I made the recipe mrstim posted for Thanksgiving, and it was a hit. The flavor was wonderful. DH said it's the best sweet potato souffle he's ever had. :) There was only one problem, it was too runny. I followed the recipe exactly. What did I do wrong? We cooked it the night before and put it in the oven on Thanksgiving to reheat before serving. Did we warm it up too long? Could that cause it to be runny?

JRPAGV, mine is always a little bit runny, and I think it's fine. Just goes with the recipe, I figured. I guess you could thicken it up with cornstarch or something...?

Just wanted to bump this up because I made the sweet potato casserole recipe posted on the first page and it was delicious! I successfully cut the butter and sugar by HALF and it was plenty sweet and rich. My version:
Sweet Potato Casserole
4 c. mashed sweet potatoes (about 4 very large potatoes baked)
3/4 c. sugar
1/2 stick melted butter
1 t. vanilla
1/2 c. cream
dash of cinnamon
dash of nutmeg
1 egg
Topping:
1 c. brown sugar
1/2 c. flour
1 c. chopped pecans
1/2 c. shredded coconut
1/2 stick melted margarine
Spread crumbly topping over casserole and bake for 20-30 minutes at 350 degrees!
It also wasn't runny at all, maybe because of the stick less butter than the usual recipe. It got rave reviews!
