View Full Version : I'm making big lunch tomorrow HELP!

DH is really stressed over things at work so I want to treat him to a really nice lunch tomorrow before he goes to work. I went to the store today and bought a honey ham (a small one) Do I just bake it in teh oven? How long? it's only a 2 lbs. ham. Also what would go good with it? I was think mashed potatos, green beans or brocolli? What else? TIA girls!

I've always thought that au-gratin potatos go well with ham. How about glazed carrots and dinner rolls? That would make a really nice lunch!! Do you need some recipes?

I'm partial to sweet potatoes baked in maple syrup, with ham. :)
Just chunk them up, place in a greased baking dish, dot with butter, drizzle maple syrup over the top. Bake at 375 for 30-40 minutes or until done. Add salt & pepper to taste, before serving.
Or if you don't like sweet potatoes, good old mashed potatoes are great too! Green beans sound good....maybe sprinkled with almonds. Yum.
I think 1 hour to 1 1/2 hours (tops, depending on your oven temp) is sufficient to bake a 2 pound ham. I forget the minutes-per-pound rule, but it can't be very long--the majority of supermarket hams are pre-cooked anyway, you're really just heating it through.

Brown Sugar-Glazed Carrots
Ingredients:
2 pounds carrots
1/2 teaspoon salt, if desired
2/3 cup packed brown sugar
1/4 cup margarine or butter
1 teaspoon grated orange peel
1/2 teaspoon salt
Directions:
Peel the carrots, and cut into 1/4-inch slices. Heat 1 inch water to boiling in the saucepan over high heat. Add the 1/4 teaspoon salt if desired. Add the carrot slices. Cover and heat to boiling again. Reduce heat just enough so water bubbles gently. Cook covered 12 to 15 mins or until carrots are tender when pierced with a fork. While carrots are cooking, heat the brown sugar, margarine, orange peel and 1/2 teaspoon salt in the skillet over medium heat, stirring constantly, until sugar is dissolved and mixture is bubbly. Be careful not to overcook or the mixture will taste scorched. Remove the skillet from the heat.
Drain carrots in a strainer, then stir them into the brown sugar mixture. Cook over low heat about 5 minutes, stirring occasionally and gently, until carrots are glazed and hot.
Mashed Maple Sweet Potatoes
Ingredients:
2 cans sweet potatoes
1/4 cup maple syrup
2 tablespoons butter
2 tablespoons orange juice
1/2 teaspoon salt
1/4 cup toasted chopped pecans
Directions:
In large saucepan, heat potatoes until warmed through. Remove potatoes from heat. Using an electric hand mixer, beat potatoes until light and fluffy. Stir in maple syrup, butter, orange juice, and salt. Transfer to a serving dish. Sprinkle with toasted pecans.
Easy Glazed Sweet Potatoes
Prep Time :
Cook Time : 30min
INGREDIENTS:
2 pounds medium sweet potatoes, cooked, peeled, and cut up
1/4 cup butter
1/4 cup maple syrup
1/4 cup light brown sugar, firmly packe
1/4 teaspoon cinnamon
PREPARATION:
Place cut up sweet potatoes in a buttered 2-quart baking dish. In a saucepan, combine remaining ingredients; cook until mixture boils. Pour over potatoes; bake at 350° for 30 minutes, or until hot and nicely glazed.

Is the ham already pre-cooked or completely raw? That would make a big difference in the cooking time. I usually "score" the skin of the ham and press in a tablespoon or so of brown sugar and then wrap it in aluminum foil.

Well the ham is pre cooked. I just made, it was fablous!!! I cooked it fora bout 30-35 minutes basicly just to heat it up, lol. I made sweet corn, mixed veggies, potatos and some raw carrots and celery to go with it. DH LOVED IT! He even wanted the left overs to take in his lunch. lol He hardly does that unless I make his favoirte spagettii sauce. Thanks girls!!!
