I want to make rice tonight. I have some red and green peppers. How can I incorporate them into the rice with some yummy recipes?

You can make a sort of Spanish yellow rice:
Dice your peppers along with some onions and saute them for about 5 minutes in some olive oil.
Put in the dry rice and stir around for 2 or 3 minutes.
Then add vegetable or chicken stock instead of water - 1 1/2 to 2 times the amount of rice (or whatever amount of water it says to use for your rice).
Add 1/4 tsp ground turmeric or saffron and a bay leaf; bring to a boil.
Once it reaches a boil, turn the heat down and simmer, covered, until the rice has absorbed all of the liquid.
Remove the bay leaf and you're done!
The ratio of liquid really depends on what kind of rice you're using, but you might want to put a little bit extra since you will have peppers and onions in there.

The spanish rice sounds very tasty!
You could also make a vegetable fried rice. Heat a little bit of vegetable oil in the bottom of a wok and scramble an egg. Remove it and set aside. Throw your peppers and any other chopped veggies you like (we use broccolli, baby corn, and water chestnuts) in the wok, toss with some soy sauce or your favorite Asian marinade, and stir-fry until crisp-tender. Remove and set aside. Heat a little vegetable or sesame oil in the wok and add cooked white rice. Stir-fry the rice for a couple minutes. Add a little chicken broth and some soy sauce (you can also add some rice wine vinegar if you have it) until you get a flavor and consistency you're happy with. Add in the egg and veggies and stir it all together. We eat this all the time with some frozen dumplings or edame to round out the meal. You can add cooked chicken breast to the rice if you like.

thanks amew. i have made the fried rice way too much lately. I love it, but hubby gets sick of it i think. i usually make it with chicken.
