View Full Version : Fish encrusted with nuts - Question

This is probably a dumb question but I don't know the answer. I want to make Mahi-Mahi encrusted with macadamia nuts but I don't know how you get the nuts to "stick" to the fish. Should I do a thin coating of dijon mustard? Should I dip the fish in egg? Or, do they just stick on their own? If you have made something like this before, I would appreciate your tips. Thanks.

I normally smash the nuts somewhat so there are some smaller pieces - it helps it stick better. Sometimes I will take the nuts and pulse them in the food processor with some bread crumbs and seasonings to get a finer coating.
For the breading: I would dip the fish in flour first and shake off all of the excess, then egg or egg mixed with dijon mustard, then the nuts (and/or breadcrumbs). The flour helps everything stick onto the fish.

I do this with beef filet. i spread a little mustard on the filet, then press the chopped nuts right into it and sear in a hot pan...very hot pan. resist all temptation to move it around for at least 2 minutes!
for fish, i cheat, and only put the nuts on one side, and bake the whole thing in a pan in the oven. all the taste, none of the effort!
