View Full Version : I need a good, easy & yummy dessert...

A brief background...we're on doctor's orders to fatten up my FIL. We're doing a family BBQ on Monday and I'd like to bring a good dessert (something he won't be able to resist).

I was thinking of maybe a dump cake (less things to have to clean afterwards). I have to hit the store anyway to pick up the fixin's for potato salad, so that's not a problem. He *loves* chocolate and strawberries, (but they tend to make him a bit sick when they're fresh - I've used them as a filling before and he was fine).

Any easy & yummy recipes you guys swear by? :D

I always take Tyler Florence's Ultimate Cheesecake recipe when I want to make dessert. Here it is:

Also, I leave out the blueberries completely and serve it plain.

I have an EXCELLENT chocolate mousse recipe but it isn't online and it has raw eggs. If you think you might be interested anyway, let me know and I'll type it out for you.

I don't have any dump cake recipes that I make, but I'm sure Paula Deen has something gooey and sinful you could make.

Personally, I love cheesecake, but with the time in the oven (and the mixing beforehand) that it requires, I think I'll have to try that in the upcoming cooler months. Thanks for the link though. I'm thinking my FIL (and the kids) aren't big mousse fans (if you can imagine), so I'm thinking a cake-like dessert might be better.

ooohhhh, Paula Deen, the queen of sinful. That's a great suggestion. I'll go do a quick peek in her thread and see if anyone has posted anything.

I don't know what it's called, but Paula Deen was making something gooey and chocolate this morning...it reminds me of a trifle my friend makes. I think it's a layer of broken up chocolate cake, from a box, then you poke holes in it and drench with kahlua (you could use coffee, I'm sure, if you want to avoid the booze). Then it has chocolate pudding, and crumbled heath bars, and a bunch of whipped creme on top.

I could seriously sit there and eat it out of the trifle bowl. You could probably do the bottom layer with cake or brownies purchased from the bakery, if you don't want to turn on the oven.

I saw that over in the Paula Deen thread. Never thought to just make the same thing with all store bought stuff. What a great idea! Thanks, I just added that to the list of "fatten up my FIL" foods to make him.

1. Angel food cake-tear into peices
2. Fresh or frozen strawberries-sliced
3. Whipped topping

In a deep round dish layer above ingredients. Since strawberries are an issue for your FIL you could probably use another fruit. This is very easy to make, my ten yr old made one for me to take to a babyshower. Everyone loved it!

Thanks Raquel, with angelcake, it almost sounds too healthy :D. Isn't there a recipe similar to that involving candy bars and pudding and layering and such? I thought I remembered that from the WC.

Katy-- I think you're talking about the following. I copied it from the WC and emailed it to myself eons ago, and unfortunately don't remember who the original poster was-- if anyone remembers, please post so I can give them credit!

Here it is:
You will need a trifle bowl. You can get them at Walmart for less than
$20 and you'll be asked to make this over and over, so get one if you
don't have it. Otherwise, maybe a nice glass small bowl of some sorts
would work.

Bake your favorite box mix brownies. Set aside to cool for some time.

After the have cooled, crumble into med. size pieces. I just cut them,
put them in a zip lock, and kinda cruble them inside there.

Fix a LARGE thing of Fat Free Chocolate Pudding and chill as per instructions.

Just layer the bottome of the trifle bowl with 1/3 of these, top with
1/3 of the pudding, take a large tub of Low Fat Cool Whip and top with
1/3 of that, then take a Crackle Candy Bar or a Toffee Candy bar,
crumple and top with some of it. Repeat twice (three layers total)

That trifle sounds like I trifle I make called Paradise Pudding. The bottom layer is crumbled fudge brownies. Then you layer chocolate pudding, cool whip and top it off with crumbled Butterfinger for decoration. It is delicious half- frozen.

That sounds like exactly what I was thinking of. Thanks Emily! And the best part...I can make it all without ever even cooking! :cool: So I think this might be the dessert for tomorrow! Yay :D

We make a dump cake, but it's not the typical variety..

1 can of crushed pineapple (drain some of the juice)
1 can of cherry pie filling
1 box of yellow cake mix
2 sticks of butter/margarine (cut into pats)
Chopped nuts (pecans or walnuts)- per preference

Preheat oven to 350. In a 13x9 baking dish, spread/mix pineapple and cherry pie hilling across the bottom. Then spread (do not mix together!) DRY yellow cake mix over the pineapple/cherry mixture (I like to pour dry cake mix into a bowl to break up any lumps before adding to mixture). Drop pats of butter evenly over the cake mix. Sprinkle chopped nuts over butter. Bake uncovered for 1 hour or until top is brown and pineapple/cherry mixture bubbles through the cake top. Serve as cobbler with vanilla ice cream or whipped cream.

We had a BBQ last night and someone brought this exact cake - It was SO-O GOOD (no nuts though)! I've never heard of dump cake before - where have I been??? Simply Yummy :)

BTW - my friend sometimes interchanges cherry pie filling for bluberry filling or she said she'll only use canned peaches in heavy syrup for more of a true cobbler flavor.

I was going to suggest the trifle too! :) I love making trifle and you can really mix up the ingredients. If your FIL loves strawberries, one thing you can add to the layers is to get some strawberry pie filling and add it. I have also made it with chocolate cake rather than brownies ... but I think brownies would be richer and chocolaty-er! :)

I posted another trifle recipe in the pumpkin thread that involves cut up pumpkin pie, maple syrup, nuts, and whipped cream.

I've picked up the ingredients for a dumpcake (cherries & pineapple) as well as for the triffle. Since the triffle involved milk (and we rarely, if ever drink it), I've decided to make that one for today. I figure the dump cake might make a good something to "nibble" on, so I'll make that next weekend or during this week sometime.

Just wanted to fill everyone in...I decided to go with the brownie triffle. Everyone loved it, my neice was begging for the recipe (and ate two servings) and before we left, my FIL was asking if there was any more "chocolate stuff" left over. Yay! :D

Now I'm going to start a post asking for simple cakes that I can make once a week that he can have as a snack with his coffee (like coffee cakes, bundt cakes, etc.). Thanks ladies for all your help.
