View Full Version : *Cherry* Tomato Recipes

Guys, my husband went a little cazy with the cherry tomatoes this year. I can regular tomatoes, so that's not a problem, but I'm stumped on what to do with all these cherries.

So far, we've used them on salads (green and pasta) and sliced them in half and served them with red wine vinegar, sugar, and basil. Other than that, I'm stuck and we have three large tubberware containers in the fridge that I need to get rid of. Cherry TOmato recipes are needed, please!

I have a pasta recipe with cherry tomatoes, ziti, riccota, and fresh basil--it's really good! I'll post it later from home.

You ca just roast them in the oven. It's delicious. Just spread them out on a baking sheet, drizzle with olive oil, salt and pepper them and then roast them at a high heat for like 20 minutes. Then sprinkle some basil chiffonade over them and you have a delicious and healthy side dish.

PS You didn't ask this, but I feel compelled to point out that tomatoes have much better flavor if you don't refridgerate them.

Oh, I know. ;) Its just that they are going bad so quickly, I'm hoping the fridge will slow things up a bit. Our garden is will over 5,000 sq. feet and its just me and husband. I can't keep up. There's a bushel of freshly picked cheeries sitting on my dinning room table right now.

Just roast them whole. If they are a bigger variety, it might take a little longer than 20 minutes.

Your garden sounds amazing! As a resident of a gritty urban neighborhood, I am officially jealous.

My favorite dish for those is one I got from MS Everyday food. Basically roast them in a 9x9 or loaf sized pan (so they're an inch and a half deep) but put a gratin topping on them first: breadcrumbs, parmesean, and some seasonings. Yum!

You can also roast them as others have suggested, adding some OO, garlic, salt, and some onions. Run the cooked veggies through a food mill for a really yummy roasted tomato sauce. I did this last night with my plum tomatoes, and it was very good. (I put the roasted veg. in the food processor, as I didn't mind getting the skins in there - more vitamins & fiber)

There was a recipe in one of the Food sections of the paper last week for dried tomatoes - they specifically talked about cherry tomatoes, and how they tasted so much better (to the author) if they were over-dried - basically carmelized. I'll see if I can find it when I get home and bring it in tomorrow - it sounded really good!!

Cherry Tomato Crisp
Preheat oven to 400
Combine 2 slices white sandwich bread, 1/4 cup grated Parmesan Cheese, 2 tablespoons fresh parsley leaves, 1 tablespoon olive oil, and 1 chopped garlic clove; season with coarse salt and ground pepper. Pulse until bread is very coarsely chopped, about 4 times.
In a 8 inch square baking dish, arrange 1 1/2 pound cherry tomatoes (about 5 cups) in a single layer; sprinkle with crumb mixture. Bake until crust is browned and tomatoes are tender, 20-25 mintues.

Sauteed Cherry Tomatoes with Shallots
2 teaspoons olive oil
3 tablespoons finely chopped shallots (about 1 large)
4 cups cherry tomatoes
1/4 cup chopped fresh parsley
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper

Heat olive oil in a large skillet. Add shallots, cook 2 1/2 minutes or until tender, stirring occasionally. Add tomatoes, cook 5 minutes or until slightly soft and throughly heated. Remove from heat. Stir in parsley, salt and pepper. Serve immediately.

I can cherry and grape tomatoes just like regular ones. Remove the skins, and can them whole. They do quite well!
