AUGH! VERRRY frustrated. I have been plateauing around the same pound all week, and then this morning I woke up and had gained .6 of a pound since yesterday. NO idea why -- I certainly wasn't living high on the hog. I've been really good today as well, but I am realizing that I haven't pooped in 2 days, so that's probably a factor... :o
Anyone else have issues with constipation on this plan?
I've started phase one today and managed to receive and serve the pizza my family ordered and get some salad and scrambled eggs for me instead!

Ok, I decided to try this. Just for a week, because right now two seems completely unreasonable! I've lost weight before just watching calories and exercising, so I'm not sure why I'm trying this, but what the heck. I've tried before and lasted about 2.5 days.
Today has been...ok. I'm not doing strict phase 1, b/c I don't eat eggs, so I'm continuing with my light, whole-grain english muffin for breakfast (with veggie "sausage"). I've also had a light cheese stick, a huge salad with chicken, and celery with natural pb. Dinner should even be good--lean steak with sauteed mushrooms and roasted asparagus. There is no reason to feel deprived, but I feel that familiar headache coming on...
For those who have made it past 2.5 days :o , when does the headache go away? Or maybe I should just go to phase 2... but I'd really like the jump-start, b/c I have been a chip-eating slug all summer.

My headache went away on day 3, I think. After that, Phase 1 was a breeze... I wanted to do it longer than 2 weeks, but caved and had grapes. You can do it!

Thanks :). Well, day 2 is down (I guess it's not over yet, but I'm not much of a night time snacker so I'm not too worried about today). Tomorrow is day 3, aka Historical Day of Failure. We shall see. The weekend should be interesting... I can't remember the last time I went an entire weekend without wine.
I usually can't stick to any diet for 3 days, but I've just completed one week in Phase one and 8.8 lbs later I'm very happy! I am having some issues, but it seems worth it to me, especially for just another week.

Bumping this thread... I'm considering trying the diet. I've done WW in the past and been sucessful, right to the point where I quit! I've thought about Jenny Craig and Nutrisystems, as I like the idea of the prepared foods, but as a friend pointed out to me, at some point you still have to wean yourself back onto "real" food. I watched a Diet Doctor episode on FitTV and they reviewed the SBD, saying it's pretty healthy though Phase 1 is darn near impossible to do for two weeks. I see from the posts here, though, that it's obviously a diet that works!
Anyone have any advice for me? I have the book from the library and I started reading it - do you have to be able to cook well to do this plan? I can't cook more than absolute basics!
I don't cook and I had no problems (and I'm a picky vegetarian on top of that!), but I did get bored after 10 days of eating the same two meals. Today I'm starting phase two after a couple slips and I'm hoping it'll be easier on me. I lost 10 lbs on phase 1.

Sol - thanks for the input. That's a great loss for one week! See, that inspires me - I could sure do with dropping 10lbs. I'm trying to finish reading Phase 1 today so that I can make a food list for when I go to the store tomorrow, and then I can cook at least some baked chicken and have eggs for the mornings. DH and I are going away for Labor Day to his family in Northern CA so that'll be hard, but I figure I might as well start Phase 1 now and then see if I can stick to it mostly while we're gone, or maybe start Phase 2. I'm just anxious to start something, y'know?

Hi SBD-ers. Thought I'd bump this thread up plus I have a Q...
I'm absolutely in love w/ the veggie quiche cups. I made mine w/ the red pepper, onion and spinach as the recipe calls for and for the cheese I used a reduced fat Mexican blend. OMG... sooo delicious. I'm astonished since I'm not a big egg eater. I could eat those cups all day.
My question... Have you made the SBD veggie quiche cups in a casserole dish (or something like that)? I'd like to make it fresh on Saturdays & Sundays for us instead of just reheating the quiche cups I keep in my freezer for work days (especially since we don't have a microwave at home, if you can believe that).

Gosh, this thread has been so inactive.
Kd, you know, I haven't actually made the quiche cup recipe in a bigger dish, but I know you can. People make egg type casseroles all the time baked in the oveh. Another thing you may want to try is a Frittata. It the same basic ingredients, just cooked a little differently. It's like a big omelette. Here are a couple of recipes I found.
Light Spinach Frittata with Tomato Salsa
SUBMITTED BY: The South Beach Diet Online
"Put a new spin on your morning eggs courtesy of Phase 1 of the South Beach Diet, complete with a tropical twist. You can also serve the frittata with commercial jarred salsa."
Original recipe yield: 2 servings
Frittata:
1 tablespoon extra-virgin olive oil
1 small onion, sliced
2 cloves garlic, minced
1 (10 ounce) package frozen chopped spinach, thawed and well drained
2 large eggs
3 egg whites
1/3 cup fat-free evaporated milk
1/2 cup shredded reduced-fat mozzarella cheese
Salsa:
4 plum tomatoes, seeded and chopped
2 scallions, minced
1 clove garlic, minced
2 tablespoons minced fresh cilantro
1 tablespoon fresh lime juice
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
DIRECTIONS
To make the frittata: Preheat the oven to 350 degrees F. Heat the oil in a 10-inch nonstick skillet over medium heat. Add the onion and garlic and cook, stirring, for 3 minutes or until tender. Stir in the spinach. Reduce the heat to low. In a large bowl, beat the eggs and egg whites with the milk until light yellow and frothy. Pour the egg mixture over the spinach in the skillet. Cook for 5 to 7 minutes, until the egg mixture is cooked on the bottom and almost set on top. Sprinkle with the cheese. Bake in the oven until the eggs are set and the cheese has melted, 5 to 10 minutes.
To make the salsa: In a large bowl, stir together the tomatoes, scallions, garlic, cilantro, limejuice, salt, and pepper. Serve fresh, at room temperature, over the frittata
Spinach & Mushroom Frittata
INGREDIENTS
1 (10 ounce) package frozen chopped spinach, thawed and squeezed thoroughly to remove liquid
4 eggs or equivalent egg substitute
1 cup part-skim ricotta cheese
3/4 cup freshly grated Parmesan cheese
3/4 cup chopped portobello mushrooms
1/2 cup finely chopped scallions with some green tops
1/4 teaspoon dried Italian seasonings
1 pinch Salt and pepper, to taste
DIRECTIONS
Preheat oven to 375 degrees.
In a large bowl, whisk together all ingredients until well mixed. Spray a 9-inch pie plate with cooking spray and fill with the spinach mixture.
Bake for 30 minutes, or until browned and set. Let cool for 20 minutes, cut in wedges and serve.

Where is everyone?! :) Are any of you still doing the diet? Yesterday was Day 1 for me and DH. He's finding it incredibly easy, while I'm finding it only a little easy. I'm trying not to weigh myself until next Wednesday, but it's hard!! Why is that?
Let me know I'm not alone here! :D

I just made some yummy hot chocolate that, correct me if I'm wrong, is fine for phase one. And it really satisfied that chocolate craving.
Mix:
2 TBSP Splenda
2-3 TBSP unsweetened cocoa powder
Dash of Salt
Heat 1 Cup skim milk in the nuker for 2 min, slowly stir into cocoa mixture. Add a splash of vanilla extract. Enjoy.

I've been on SBD since Jan 8 and so far I'm down 13 lbs. I've done pretty good sticking to the diet (went way overboard at the SuperBowl party we went to on Sunday and just had 3 fresh-from-the-oven chocolate chip cookies our neighbor brought us :o) and it actually feels good to have this much control.
We have the Quick and Easy SBD cookbook and I haven't had one meal yet that I haven't liked.

I started back on it last Monday. I cheated on Saturday and I've been a little loose with the amount of string cheese I've eaten, but I'm down 5 pounds. If I can take off another 10, I'll be one happy girl. If I can get another 15 off, I'll be ecstatic.

I've been doing really well so far. I'll weigh myself again on Sunday to see if I've made any progress.
Breakfast is usually some variation on scrambled eggs. (I can't flip omelets, lol)
For snacks, I usually have cheese sticks, deli meat, or nuts. Once a day, I reward myself with a tall non-fat sugar free vanilla latte from Starbucks. It's so nice! (not as nice as a white mocha, but the only sugar in it comes from milk.) I count it against my dairy for the day.
Lunch is usually leftovers from the night before or a salad. Not very exciting.
Dinner is usually a marinated meat (chicken, salmon, or lean steak) and lots of veggies. Tonight it's spinach, green beans & zucchini with chicken.
If I feel the need for a treat later, I have either a no sugar added fudge pop, no sugar added hot chocolate, or a sugar free popsicle.
Even though phase one is going well, I hate eating with my coworkers at lunch and I can't wait to get to phase 2!
I started phase I yesterday, and lost 2.5 lbs by this morning. I'm hoping this will speed up my weight loss a bit because I've been losing and regaining the same five pounds all month.
Starting day three today and 4 pounds down already. Out to make a big bowl of edamame!
Starting day four, 4.5 lbs down.

My last day of Phase One will be Saturday....I have a few more days, but it will be much easier with my coworkers out for the rest of the week at a conference. They are a constant source of temptation!
I don't expect any big losses, but if I can just have some steady losses it will be worth it. I want to be thin again!

Alright.... I was suppposed to start about 2 weeks ago but just started on Monday. Today is Friday and I am down 8 lbs:D I cannot even begin to tell you how stoked I am!!! 8 down, 62 more to go:rolleyes:

Great losses everyone! DH & I moved to Phase 2 a couple of days early and still did well for two weeks. DH is down 9.2lbs and I am down 4.8lbs. I think that I will have a much easier time on phase two.
I also found this incredible recipe for frozen chocolate cheesecakes that is amazing! 40 calories for two of them and it's phase one legal!
Frozen Chocolate Cheesecake Bites!
(2 Bites: 40 calories, 0g fat, 100mg sodium, 6.5g carbs, 0g fiber, 1g sugars, 2g protein = 1 Point!)
Meet our new favorite use for ice cube trays.
Ingredients:
3/4 cup Cool Whip Fat Free (or light)
5 tbsp. fat-free cream cheese; softened
1 tbsp. SPLENDA, Granular
10 tsp. HERSHEY'S Sugar Free Syrup
Directions:
Using a fork, vigorously mix Cool Whip, cream cheese and Splenda until smooth and well blended. Evenly distribute mixture into 10 sections of an ice cube tray. Tap tray firmly on the counter a few times to get mixture to settle flat. Next, top each with a teaspoon of chocolate syrup. Tap tray again to settle. Place tray in freezer until Bites are solid -- at least 2 hours. Once frozen, Cheesecake Bites should pop out easily. If you like them more whipped and less frozen, put in freezer for 1 hour.

ooh, thanks for that recipe!! I'll def. try that this week. I moved onto Phase2 today.. well, a sorta cross between 1 and 2. I've tried the high protein bar in peanut and it was sooo good. I also had a SB t.v dinner for lunch. It was the kung pao chicken. That too was good. I really think this time I can do this.

I started last friday and I've lost 6 pounds so far.
I did SouthBeach before and lost 30 pounds, but then I slacked off and then FELL off, so now I'm back and hoping/praying I stick this time. It really is easiest to stick with it once you've gotten into the habit. My weight loss goal right now is to drop 34 (I know it seems random, but it will hit a number on the scale that is motivating to me) and then see what I feel like then and then to just continue on from there.
I'm loving the recipes here you guys!

FH is doing the SBD, which means that I am also doing it by default. I was suprised at how easy it really is; its not that different from how I normally eat. I guess FH is in Phase 2, so the biggest thing I am looking for is some variety in lunch/dinner recipes. He says he doesn't mind the same thing everyday, but I am bored. This is what we ate today, just to give an idea:
Breakfast: Scrambled eggs (1 whole egg and 2 whites), 2 pieces canadian bacon, sugar free vanilla latte with skim milk.
Snack: sliced cucumbers and peppers. Nonfat, sugar free pudding
Lunch: Leftover beef tenderloin, clementine
Snack: Celery with peanut butter
Dinner: Grilled chicken breast, tomato, cucumbers and mozzarella with balsamic vinagrette, brocolli
FH has lost about 50-60 lbs in about 6 months so I would really like to keep helping him by finding some new recipes

I'd like to start up SBD again b/c it worked so well for me last time and was pretty easy. I want to lose at least 15lbs (although I would be thrilled with 20lbs) ...baby steps...
Dotsie- great job! how long did it take you to lose 14lbs?

Ceasar Dressing in Phase I (or in any phase for that matter). Can we have it?
I was gonna have a ceasar salad on the side with my salmon tonight.
2 Tbsp = 1 Carb, 0 Sugar, 18g fat.

DH and I did a modified version of South Beach last year and loved it. Aside from the weight loss, we just felt better and more energetic. So, after slipping into the same old junk food habits over the last few months, we decided to do our version of South Beach again. Basically, we just cut out a lot of the junk and eating out, but we use the South Beach book as guidance. DH has done all of the cooking so far, and since some of you asked for recipes, I thought I'd share! (FYI - They are both good for all phases, if you are being strict.)
Grilled Mahi Mahi
From the SBD book
DH broiled rather than grilling it. It was GOOD. And I put the leftovers on a salad the next day for lunch - delicious!
1 lb mahi mahi
2 tsp olive oil
2 tsp lemon juice
1/4 tsp salt
pepper to taste
2 cloves minced garlic
Brush both sides of the mahi mahi with olive oil and lemon juice; sprinkle with salt and pepper, then rub the garlic on the fish.
To broil, put the fish on a broiler pan covered with nonstick spray. Broil 4 inches from the heat for 4 to 6 minutes per 1/2 of thickness, or until the fish flakes easily. (The method is the same for grilling.)
The other was this recipe (Zucchini and Calamari Salad (http://www.cooks.com/rec/view/0,1943,140181-229200,00.html)) from Cooks.com. Instead of just calamari, DH used calamari, shrimp, and scallops. I don't think this would be good reheated, but it was so good that we ate it all.
lelee - I'm not the best person to give advice since I don't follow it strictly, but I think if you found a low fat caesar dressing it would be ok. 18g seems like a lot of fat, but the carbs and sugar aren't bad.
Ack, I'm trying Phase I and not doing too well. I think part of the problem is that I can't figure out what to eat besides eggs and salad. And mushrooms.
I don't like meat that much. I can't have soy because of some thyroid things (I used to live on tofu.)
Phase II after a while seems totally do-able. I just can't figure out how to get through Phase I. I've eaten my weight in salad.
Also, I had such a crazy day that I ate a sandwich with wheat bread. That might be why I'm hungry. I've blown it for Phase I today.
I did SB before and just skipped Phase I but I don't lose weight easily like I used to so I thought I should try Phase I this time. SO HARD!
I'm restarting SB Phase 1 today, to see if I can finally get rid of these last 10-15 lbs. I'm off to try to find 100% tofu noodles, since I'm a vegetarian and a terribly picky eater.

I knew I had posted before in a South beach thread. FH gained back some of the weight he lost before (somehow taking a break from South Beach on the weekends turned into everyday, and he wants to loose it before our honeymoon), so I thought I'd bump to see if anyone had any new recipes/meal ideas.

Hey everyone, I tried SBD about a year ago after having my DD. I lost 7 pounds the first week, but by the middle of the second week I was STARVING. All. the. time. I tried eating and eating all the stuff I was allowed to have in phase one, but I just couldn't seem to get rid of the hunger. Any suggestions for that? I'd really like to try it again...

FH swears that celery is the key to getting through the first weeks. He snacks on it a ton. I guess all the fiber in it hels him feel full. I think the other key is actually eating 3 meals and 2 snacks. HTH.

The key for me is cheating! Lol. Just kidding, but I do use the South Beach Meal Replacement Bars, even when I'm being very strict. I just allow one a day. When I feel the need to cheat, I take a bite of the bar and it generally satisfies my craving for something off diet. I have found it really doesn't affect my weight one way or the other, either. And one bar will last a day or two, since I'm just taking a bite here and there as needed.

This is what FH had yesterday to give an idea of meal planning:
Breakfast: 1 egg and 2 egg whites scrambled with onions in olive oil, 1 slice canadian bacon
Snack 1: Celery with Peanut butter
Lunch: Leftover sirloin tip roast, brocolli, side salad
Snack: Sugar free jello cup, celery
Dinner: Grilles Salmon and Asparagus, Sliced tomato and mozzarella (low fat) with a drizzle of balsamic vinegar
Dessert: Sugar free low fat fudgesicle

I am on day 4 of phase 1 and so far so good (considering all the candy we have in the house from Halloween). My next challenge is the upcoming weekend (weekends are always hard for me). We are going to Maui in 2 weeks and I would like to loose 5lbs!
hey I'm in week 1 heading to week 2 and I think I lost between 4-6 pds!! I say think because it fluctuates(sp) when I get on the scale nights are hard for me!! anyone else? I could go for a nice steak for dinner!!! yummmm

I start tomorrow. I am so excited (and a little scared) to start this up again. I am totally comitted this time around.
I don't like eggs at all so I'm a little worried about how I'm going to like these next 2 weeks.
