View Full Version : Need Suggestions for (portable) Light Dinner to Feed 10-12
Okay, this month it's my turn to feed our Junior League committee. For the most part, it's all take-out food - burritos, salad, sandwhiches, pizza, etc., with an estimated cost of $50.
I was thinking of making a Greek salad since it's SO easy to make and then bringing something with - maybe spanikopita, but not sure everyone would eat it. Most folks seem to bring a salad and a meat product (we have no veggie folks). Any suggestions?

With a Greek Salad, kabobs would go nicely and they are easy to eat. I think they are good at warm to room temp so having them piping hot wouldn't be necessary.

Do you have a good Greek restaurant close by?
You could get a couple pounds of the sliced Gyro's meat, and then bring all the fixing's to make Gyros sandwiches, along with a Greek salad. I think that would be yummy!
Or, you could do several salads to bring with breads. Maybe tuna salad, a chicken salad, a thai beef salad.
Or, you could do a big Taco salad, and bring the hot meat in a dutch oven wrapped in towels and foil to keep it warm.
Or, a couple layered muffalettas with a couple salads....
That's my first batch of ideas :)
Hmmm...all good ideas. I was thinking about the kabobs deal thinking the same thing, that they wouldn't have to be piping hot. I was thinking of maybe getting something through Daphne's (Greek fastfood place)
A selection of salads also sounds yummy and that would just be deli counter and breads with a bagged mixed green base (trader joe's of course)

A taco salad would work as well. Although that would be a buttload of prep work on my part (dicing tomaotes, cheese, olives, etc.,)
Aw man, I just got my email regarding dinner and I was under the mistaken impression that our meeting was Thursday. Turns out it's tommorow. So now it's looking like I'll be going to catering route for the entire meal *sigh*

Why not a couple of family size stouffers lasagna?? Usually I'm all about a casserole, but since you found out its such a last minute thing???
I had thought about something like that Courtney, but decided against it as 1) it's still so bloody HOT out here and 2) I'd be using someone else's kitchen. The great thing with take out, there's not mess to have to clean up! :D When I called my leader to get a final head count, she said we were only scheduled to have about 6 ladies and suggested I just get pizza. So pizza, buffalo chick strips and chocolate cake it was! And I spent more on the cake, napkins and plates than I did on dinner! :eek:

Yumm. That sounds like pretty good dinner.
It worked and there was just enough leftover for the hubby to have some too :D
