View Full Version : Recipe for yummy ice cream pie

This is a pie I try to make once a summer - it is soooo good and really easy to make. Thought I'd share.

I don't have a recipe, so measurements are approximate, and there's a lot of "eyeballing" involved. ;)

4 cups Rice Krispies
2 cups semisweet chocolate chips
1/4 cup butter
1 quart Jamoca or Jamoca Almond Fudge ice cream from Baskin Robbins
(store bought ice creams don't have a high enough fat content, so they don't work as well.)

Remove the ice cream from the freezer so it can start to thaw.

Melt the 2 cups chocolate chips and 1/4 cup butter together over very low heat. When most of the chocolate is melted, I suggest removing it from the heat so the chocolate doesn't scorch. When it is completely melted, mix in the 4 cups Rice Krispies until all the Krispies are coated in chocolate. Pack the mixture into a greased pie plate to form a crust. It will seem like too much at first, but pack it very tightly. Refrigerate the crust for about 30 minutes.

Pour the ice cream into the crust. If you want to make it pretty, put chocolate shavings on top. Freeze for at least two hours or until ice cream is hard.
