Horseshoe Tournament

Has anyone ever hosted a horseshoe tournament? I need help! I somehow was put in charge of this event for our work picnic in three weeks and I just need some tips on scoring, rules, brackets, elimination, etc. I've been online and read up on some of the NHPA rules and whatnot but I don't think we need to be SO strict or difficult, but I do want to lay down some guidelines.

Our plan is to have two-person teams. What do you score to for each game? How to determine if we do single or double-elimination? I just need help/tips!
