Can anyone clue me in on the proper way to defrost a wedding cake top? Our anniversary is coming up in about two weeks and I'm not sure how much time I should allow to defrost our cake. It's been in the freezer all year (except for half a day spent in my mom's carry on bag when my parents brought it to us during their visit in May) wrapped in foil at least (not sure what else as I wasn't the one to wrap it). Do I just set it out on the counter? How long does it take to defrost to the point that it's ready to eat?

Thanks! :)

We defrosted ours in the fridge and it took 2 or 3 days (I can't remember exactly but I think it was 3).

I drove mine from CO to MO 2 weeks before my anniversary. It was in deep freeze, and we packed it in foil and styrofoam for the trip. When we got home, I stuck it in my refrigerator and it sat there until we cracked it open. No problems at all.

I would put it in the fridge a couple days before, and then the day of set it out to come to room temp.

Exactly what's been posted here. 2-3 days in fridge, put on counter that afternoon so it becomes room temp.

Thanks, ladies! :D

Another question: Do I take all the foil and stuff off the cake to defrost or leave it in its wrapping?

I left it in the wrapping while it defrosted.

We didn't bring our cake up to room temp, btw. We like eating cake right from the fridge. ;)

Leave it in its wrapping until you're ready to cut.

I took all but two layers off to defrost in the fridge. Definitely take it out of the fridge and set it on the counter for a few hours before you eat it so that the frosting can soften.

We had our cake 2 weekends ago! It took three days to defrost in the fridge, and I completely unwrapped it so that the frosting wouldn't get messed up when it was unwrapped. I then covered it with a new sheet of foil. It turned out perfect!

Two days before I moved the cake from the freezer to the fridge. The next day, I unwrapped the aluminum foil & plastic wrap that my mom had put around the cake box. The day of our anniversary I left the box out on the counter to get the cake to room temp. It was delicious!

Happy Anniversary!

We put ours in the fridge fully wrapped and boxed for 2-3 days.

Then we took it out a few hours before we were going to eat it and set it on the counter and took off the wrappings but left it in the box.

It was really moist and good. I was very impressed after hearing horror stories of the cake being dry and yucky.

<hijack> Can I just say how silly I feel? When I read the title of this thread I thought "Why does she want to take the frosting off her cake?" Duh!

I'm so excited for our anniversary and to eat our cake!! :D

Sandie LOL. The frosting is the BEST part! When I eat a piece of cake, I always eat the cake part first and save the frosting until last. Yummy. :p
