View Full Version : Pot luck bar-b-que ideas

My family is having a pot luck bar-b-que in memory of my grandma who passed away a year ago on the 20th
MY family is large..I'm not sure how many are planning on attending, but I'd like to bring something that can feed a decent number of people.
If you wonderful ladies could give me some ideas and/or recipes that would be great!
So far, hamburgers, hot dogs, corn and cake are covered

That is such a nice idea! :)
One thing that comes to mind is a big batch of cole slaw. I make it the lazy way, but it is really, really good.
Cole Slaw
2 pkg cole slaw vegetables
1 bottle cole slaw dressing (I use T. Marzetti's Original Slaw Dressing)
1 can pineapple chunks, drained
celery seed
Mix first three ingredients and add celery seed to taste. Serve chilled.

A big, huge fruit salad is always a hit! Cut out a full-size watermelon (you can make it really cute like a basket if you're artistic) and fill with strawberries, canteloupe, the watermelon that you pulled out, bananas, blueberries, grapes, apples, etc.! :)

With the fruit salade...do you add anything or jsut let the natural juices of the different kinds of fruits mix together?
As you can tell I'm not exactly milly molly home maker lol. I mean...I can cook and I cook well..but I'd like to do something different.

Deviled eggs? You can make a ton of them and they are easy.

or pasta salad... i don't have any good recipes off the top of my head, but i imagine you could google for a recipe and find one easily. basically it's just rotini pasta, bell pepper, broccoli, onion, peas, and a dressing... (sorry i couldn't be more helpful)
I was going to suggest pasta salad too, it's such a good substitute for summer salads that require mayo. Or you could make German potato salad, again no mayo.

my normal pasta salad is mayo based...but maybe I'll see if I can find a nice light non-mayo recipe

My SIL makes pasta salad without any mayo. Its so yummy.
Corkscrew pasta
1/2 bottle italian dressing
1/2 bottle catalina dressing
Cubed cheddar chesse
Pepperoni
It sounds really simple and it is, but it is so yummy.

I always just put a bottle of Kraft Zesty Italian in my pasta salad and whatever veggies I feel like adding. If you cook a whole box of rotini, this should feed a ton of people.
Baked beans would be easy, too. I don't use a recipe, just add items to taste, but here's a simple recipe I found from google:
Easy Savory Crockpot Baked Beans
An easy bean bake for a family side dish, main meal, or party.
INGREDIENTS:
6 to 8 strips bacon, cut in 1-inch pieces
3 cans (16 ounces each) baked pork and beans
1/4 cup light brown sugar, packed
1/2 teaspoon dry mustard
1/2 cup ketchup, or use part barbecue sauce
PREPARATION:
Fry bacon until crisp; drain well on paper towels. Combine all ingredients; transfer to crockpot; cover and cook on LOW for 4 to 5 hours.
Serves 6 to 8.
You could double or triple it to your needs and I'm sure you could just cook it in a pot or in a big disposable aluminum pan in the oven.

My pasta salad feeds us for almost a week
1head cauliflower (cut up)
1 head broccoli (cut up)
1 purple onion (cut up)
1 bag of that colored pasta
1 (or 2 depending on the size bottle)Zesty Italian
1 jar green olives ( idon't cut mine but you could if you wanted)
2 tomatos cut
then just mix it all together.
My Baked beans
2 Cans bushes maple cured ham beans
1 bottle of bbq sauce (kraft has a good size)
Mustard ( I just try to cover the top of the beans a couple times usually about half a botttle for this size)
1 cup brown sugar
1/2 onion cut up.
then just stir and warm those suckers up for a few minutes and serve

I've been on a Frog-eye salad kick recently. Well, I've made it twice.... It makes a HUGE batch and is SO yummy and pretty dang cheap.
If you do make it, be sure to realize that most of the salt is for cooking the pasta. Don't add it all to the sauce! Trust me on this one... :o :o :eek: :p

1 cup white sugar
2 tablespoons all-purpose flour
2 1/2 teaspoons salt
1 3/4 cups unsweetened pineapple juice
2 eggs, beaten
1 tablespoon lemon juice
3 quarts water
1 tablespoon vegetable oil
1 (16 ounce) package acini di pepe pasta
3 (11 ounce) cans mandarin oranges, drained
2 (20 ounce) cans pineapple tidbits, drained
1 (20 ounce) can crushed pineapple, drained
1 (8 ounce) container frozen whipped topping, thawed
1 cup miniature marshmallows
1 cup shredded coconut

DIRECTIONS:
In a sauce pan, combine sugar, flour, 1/2 teaspoon salt, pineapple juice and eggs. Stir and cook over medium heat until thickened. Remove from heat; add lemon juice and cool to room temperature.
Bring water to a boil, add oil, remaining salt and cook pasta until al dente. Rinse under cold water and drain.
In a large bowl, combine the pasta, egg mixture, mandarin oranges, pineapple and whipped topping. Mix well and refrigerate overnight or until chilled. Before serving add marshmallows and coconut. Toss and serve.
