I make mine very simply. Pretty much the same way I make my hot coffee. I pour coffee over ice and add flavored creamer. I don't know if that is what you meant or if you wanted something more inventive or flavorful, but it's my favorite way. HTH.

We have a toddy maker (http://www.totallytoddy.com/toddy.html) that we use for making iced mochas. We just brew the toddy then add milk, chocolate syrup, ice, and we add vanilla syrup. So yummy and much cheaper than the $4.65 at the drive thru espresso stand! The toddy is less acidic so it's much easier on my stomach than hot brewed coffee.

This is the Starbucks version from Top Secret Recipies:

1/2 cup fresh espresso, chilled
2 1/2 cups lowfat milk (2%)
1/4 cup granulated sugar
1 tablespoon dry pectin

Combine all ingredients in a pitcher or covered container. Stir or shake until sugar is dissolved. Chill and serve cold.

To make mocha version: add a pinch of cocoa powder to the mixture before combining.

To fake espresso with a drip coffee maker and standard grind of coffee: Use 1/3 cup ground coffee and 1 cup of water. Brew once, then run coffee through machine again, same grounds. Makes 1/2 cup of espresso to use in the above recipie.

Pectin is a thickener (mostly used for canning). I only know about it b/c my great-aunt canned everything. :) It won't affect the taste, it would just make it thicker.

I'm on a diet, so this is what I do:

When I make coffee in the morning (to have hot), I always make extra. After lunch, I pour the extra coffee (which is now cold) over ice, add Splenda, skim milk, and a dash of fat free half and half for creaminess.

It comes out great, and even my non-dieting friends love it!
