I'm making this pie (http://allrecipes.com/Recipe/Chocolate-Peanut-Butter-Pie/Detail.aspx)for both tomorrow's festivities and for a get together on Saturday.

When I made the peanut butter layer, I didn't really think about halving the recipe and now I have enough for two pies when I only intended to make enough for one pie for right now. Do you think I can go ahead and make the second pie tonight (for Saturday) and pray that it'll keep?

IIRC, we used to keep cream pies for three days when I worked in restaurants. That was the discard date - though, they tasted just fine, especially if not cut into at that point (we tasted plenty of them) ;) . Just keep refrigerated and you should be great.
