I am a terrible baker...i don't have the patience to measure and sift and mix and wait, and then the clean up. i can't take it.
So, i did try the cake mix route, and i have found the cake mix doctor's books. I am seriously addicted, and the folks at work get a cake a week as I work my way through the books!
Any one else out there that's made cakes this way?

I hadn't heard of that, but I do bake cakes. Most from cake mixes that are doctored. :) Funny choice of wording there, eh? :D

Love the Cake Doctor!! I love to bake and do it from scratch a lot, but can't go wrong with some of her stuff! Have you seen her other books? I have the CD, Chocolate CD, and Dinner Doctor - making meals out of canned/frozen stuff! I LOVE it!

I have this book and I havent even used it!! Ill have to check it out! But since Im trying to lose the last few PG pounds I might wait a little bit longer!
Im definitely going to check out the Dinner Doctor one though! That sounds cool!

Carrot Cake
1 box yellow cake mix
1 small box instant vanilla pudding
4 eggs
1/3 cup bourbon
1/4 cup vegetable oil
3 cups grated carrots
1 tsp. vanilla
1/2 cup raisins, chopped
1/2 cup walnuts, chopped
2 tsp. cinnamon
combine all ingredients, pour into a greased and floured bundt pan. oven 325 degrees, 50 minutes
delicious with cream cheese buttercream frosting, but good on its own!

Allrecipes.com has a whole section on cake mix cakes. I'm fond of the kahlua and the rum cakes.
I love to bake, too, but I never have time to make whole cake from scratch.
