View Full Version : Looking for Lunch Ideas...

I can do just fine with breakfast (since I normally just eat a Fiber One bar or a Vitamuffin) and I do just fine with dinner since I cook or prepare something for the two of us. Lunch though, that gets me every damn time.

Since I'm home all day (typically on the computer doing CC work) I usually have no idea what to make or what to eat. Instead, I just give up and head out to get fast food, swearing to myself that it will be the last time - yeah, it usually isn't :rolleyes: I have Smart Ones and LCs but let's be honest, a mere hour or so after eating them, I'm hungry again.

Any suggestions?

Egg white omelette stuffed with veggies. Add a bit of cheese for a bit more points (and flavor). :)

Chicken salad. If you prepare salad ahead of time and have chicken on hand already cooked, it makes it easy and quick to throw together.

Do you like cereal? Sometimes I have cereal for lunch. :D

How are you eating the Smart Ones or LCs? I find that I need to add a side of veggies to the meal (sometimes putting them directly into the dish, sometimes eating on the side) and add a small side salad - that makes me feel more full for longer.

I love veggies and eat a ton at home - brocolli, cauliflower - I eat tons of these. Sometimes I steam a huge bowl and that is lunch. Other times I will broil some green beans with garlic salt on them - tasty.

And almost always, I have to have an afternoon snack, there's just no other way to get through my day. :o

I totally agree with the LC/Smart ones. I have to supplement with something or else I am counting nickles to see if I can raid the vending machine later that day! Plus, after almost 2 years of dieting, I am getting mighty sick of them 5 days a week. So lately, I have been doing leftovers from the night before or soup/sandwich combos. I have many 1 serving bowls of the WW vegetable or taco soup in the freezer for just this reason.

Another idea - salad with tuna (bag o salad is very easy) or grilled leftover chicken? It is very quick and very filling.

On the sandwich front, Jennylou had a great point about making something up in advance. And, her steamed veggie lunch sounds very tasty and also very good for you. I buy a lot of lunchmeat at the deli (turkey and chicken) and have them shave it. Serving size (per the Boars Head flyer) is 2 ounces and 1 point. 2 ounces of shaved is a pretty good amount. Cheese, mustard, lite mayo and 2% cheese is a good sandwich. However, my new favorite sandwich is nutella/banana on lite white. 1 tablespoon nutella = 2 points. 1/2 banana = 2 points. 2 slices of lite white = 1 point. It is sinfully yummy to the point of euphoria.

one of my favorites is tuna with a little red onions, stuffed into a pita. i usually follow that with some popcorn

My favorite lunch lately has been: Whole wheat pita (half), smeared with ricotta cheese, pico de gallo on top, pop it in the oven for a few minutes to warm everything up and then enjoy. I swear i feel like i'm eating gourmet everytime and it's surprisingly healthy! Since your home you could just toast the pita and then microwave it with the toppings.

I also LOVE field greens, pine nuts, goat cheese, dried cranberries, with marzetti balsamic ving (the one in the round glass jar with the other specialty dressings)
