I'm making my DH a photo book with pictures of him and our son together and I'd like a quote or part of a song or something to start it off with. I can't seem to find anything I like...
Any sugestions?

Well it probably won't apply yet but I love the song "Daddy's Hands" by Holly Dunn. It was the only song that fit my dad and I perfectly for the father/daughter dance at the wedding. I guess the part that may fit the relationship between your DH and your son now would be:
"...There was always love in Daddy's hands."

If you google "dad quotes" you should find TONS of stuff. You also might want to check out those ready-made quote books in arts & crafts stores or those little books at the book stores. But really, there are sites that have tons of stuff already compiled (over 2 million according to Google (http://www.google.com/search?q=dad+quotes&sourceid=navclient-ff&ie=UTF-8&rlz=1B3GGGL_enUS210US210))

Yeah... I did that and went through about 6 pages worth, but none of it is moving me... I was kind of hoping there were some off beat lyrics to a song or a poem that someone might know that would be appropriate.

I love this poem. I found a picture frame at Hallmark two years ago with this poem and a spot for a picture. Since my Dh is a SAHD it seemed like the perfect gift for him:

A quote that was on a fathers day card that my son made at daycare.
The teachers dipped his foot in paint and made a foot print and included this saying:
Footprints

I don't know if you like John Lennon, but I've always found his song "Beautiful Boy" very moving. There's a great cover of it (by Ben Harper) on the Instant Karma cd.

I know this song is father/daughter, but I love the chorus for Paul Simon's Father and Daughter. You could change the word daughter to son (or boy) for your book:
