DH & I just took the Disney Cruise to Mexico in June. We went to all of the three ports you listed and in fact the Carnival Cruise was in the ports the same days as us. Honestly, DH & I agreed we would never go back to any of those ports. From what people told us was that we went to the more "touristy" parts of town and that's why it sucked. The only way I would go back is to make sure we book excursions. In P.V., the dolphin encounter excursion is suppose to be awesome.

DH and I had the opposite experience of Suzlywoozly....
We went on the same Carnival Cruise. B/c of that, we are in love with PV. We have been there 3 times in the last 5 years. I recommend lunch at Oscar's, a little restaurant on a small island on the Rio Cuale at the south end of town. I HIGHLY recommend drinks/sunset at El Faro, a bar built into a historic lighthouse in Marina Vallarta (north end of town).
In Mazatlan, you should have lunch at Joe's Oyster Bar, located at Los Sabalos (a hotel in town).
As to Cabo, I can't tell you much -- we spent most of the 6 hours in port horseback riding. I can recommend a great stable :)
As to stuff to bring -- lots of shorts/t-shirts. Also, make sure that you bring the right number of formal/semi-formal outfits for the dinners.
Send me a message if you have any other questions.
