can i make a lemon meringue pie one day in advance or will the meringue suffer?
thanks for any input!
Sorry I have no real advice I just know that when I was younger I would eat leftover lemon meringue for at least a couple days after whatever event it was for and it always looked the same and was deeeeeeeeelish! :D

You can, but the meringue may get a little soggy on the bottom where it meets the lemon custard. It should taste fine, though.
Mmmmm.......... lemon meringue pie....

I would maybe make the lemon part and then do the meringue closer to eating time.
