View Full Version : Chicken breasts, fresh salsa, and guacamole - what can i make for dinner with this?

I've got fresh salsa and guacamole from Trader Joe's and frozen chicken breasts that I would like to make together for dinner. But I am stumped on a dish. We can't eat dairy so cheese is out, and we don't have a crock pot.

Grab some tortillas and you have the basic makings of tacos. You can also grill up some green, red or yellow peppers to eat with it as well.
chicken tacos - do you have tortillas, lettuce, and tomatoes handy?

Honestly I would bake/broil/bbq the chicken and then just dip it in the salsa and guaca. Mmmm.... I have been known to eat guaca with a spoon!
(Though the other ladies ideas make 'sense'!)

Fajitas!
Get some flour tortillas, grill the chicken and wrap it up w/ salsa and guacamole. :)

You could grill the chicken, dice it, and then mix it with the salsa. Serve that mixture over rice and top with the guacamole. Sort of a Spanish rice type dish.

This is also what I would do. Yum! My favorite restaurant cooks the chicken with soy sauce, Worcestershire sauce, onions and peppers. You could also add mushrooms if you're into fungus (:p).
Like others, I would probably just do tacos--grill the chicken and wrap all the ingredients up in corn or flour tortillas--or cook the chicken with onions and peppers and do fajitas. You could also:
*Grill the chicken breasts and top with the salsa or put the chicken in a baking dish, pour the salsa on top, cover with foil, and bake it in the oven, then have chips and guac on the side
*Make taco salad by cutting the chicken up and serving over lettuce and topping with salsa and guac.
*Add some rice and/or beans and wrap it all up burrito-style
If you had some sort of non-dairy cheese substitute, you could have some yummy chicken quesadillas with salsa and quac or some deluxe chicken nachos, but I don't think either of those would work without some sort of cheese.
