Can anyone recommend a crockpot cookbook where the recipes are healthy? I saw a few online but would like to see if anyone here can recommend one. THanks!

I don't have it, but I've heard good things about the Cooking Light Slow Cooker (http://www.amazon.com/Cooking-Light-Slow-Cooker/dp/0848730682/ref=pd_sim_b_2/103-2411013-4820648) book.

I like Cooking Light (search results - slow cooking, main dish (http://find.myrecipes.com/recipes/recipefinder.dyn?action=searchResults&keywords=&QueryString=PUBLICATIONS%3DCooking%2BLight%26PREP% 2B%2526%2BEQUIPMENT%3DSlow%2BCook%26COURSES%3DMain %2BDishes%26%26keywords%3D%26sort%3D%26&query_unfiltered=+%28++%28+%28%3CYESNO%3E+%27cooki ng+light%27+%3CIN%3E+publication%29+%29+%3CAND%3E+ +%28+%28%3CYESNO%3E+%27slow+cook%27+%3CIN%3E+Prep_ And_Equipment%29+%29+%3CAND%3E++%28+%28%3CYESNO%3E +%27main+dishes%27+%3CIN%3E+COURSE%29+%29++%3CAND% 3E+%28%28+%27none%27+%3CIN%3E+restriction%29+%3COR %3E+%28+%27spc%27+%3CIN%3E+restriction%29%29%29&user_recipe=false&sns_name=&sort=USER_RATING+desc+SCORE+desc+SEARCH_NAME+asc)) . I've made the thai style pork stew a few times and really like it. I did pork char siu last week, and enjoyed it - it was better as leftovers than it was the first night!

I don't have a cookbook suggestion, but I do have a HUGE crockpot recipe file (thanks to a CCer). I believe all of the recipes are Weight Watcher friendly. I'd be more than happy to forward it to anyone that's interested.
ETA: PM me with your email address, if interested.
