Is anyone else doing core?
What I like to do is eat almost completely core M-F and save my flex points til the weekend.
Getting really bored though.

If you are doing core, what meals are you eating that are no or low points?

Chicken Veggie Soup
2 cans of crushed tomatoes
diced up red, yellow bell peppers
cut up carrots
cut up celery
cubed chicken
1 1/2 cups of water
two low-sodium chicken bolluion (sp?) cubes
just over 2 tablespoons of cornflower for thickness
I also sometimes add southwest seasonings (mrs. dash)

I toss it all into the crockpot for about 8-10 hours and it's SO YUMMY! And, then I top it off with FF Shredded cheese!

If I haven't used my core starch for the day, I might warm up a can of diced potatoes and add them to the mix.

For a really good "fake" milkshake
I put FF milk in the blender and a couple tablespoons of FF/SF dry pudding, and ice then blend. It's actually really good and helps me when I need a sweet fix. Sometimes I add in a banana or strawberries or whatever I have.

In the morning I throw ice, ff yogurt, fresh fruit ff skim milk and about a table spoon of vanilla into the blender and it makes a very good smoothie!

Okay, last one for awhile ...

I grill up some chicken breasts
Then in a bowl I mix up some fresh salsa and two avocados then I warm up the mixture up for about 40 seconds in the microwave.

For me, I top the grilled chicken with the mixture and then top with FF cheese and it's like a chicken taco without the taco.

When I make them I give DH an actual taco shell because he is not on core :)
