View Full Version : Help! Need a sugar-free angelfood cake recipe

Hi ladies-

Does anyone have a good sugar free angelfood cake recipe they'd be willing to share? I googled it & searched allrecipes & came up w/ nada!

I'm throwing a baby shower for a close friend on Sunday. She called me today crying b/c her OB diagnosed her with gestational diabetes this morning!:( Originally, she wanted a ice cream sundae bar in lieu of a cake, but that's out now. However, I thought sugar-free angelfood cake w/ fresh berries would be OK. I looked at the sugar-free angelfood cakes in the store & they looked icky & they felt hard as rocks! I'd love to make a pretty dessert that my friend can still enjoy.

Just an idea...there is a version of Splenda for baking, I believe. I haven't used it, but you might want to try it.

I did a quick search and you're right, it's really hard to find a sugar-free angelfood cake recipe.

There are a lot of sugarfree dessert recipes though, and actually, you probably could still do your sundae bar b/c there are sugarfree ice creams and toppings. The other thing is that an angelfood cake has so few ingredients, the taste is very simple (for lack of a better word) and thus a sugar free angelfood cake would probably be less tasty than, say, a sugarfree pumpkin pie or something that has a stronger flavor. In addition to taste, sugar has a big impact on texture, etc., so choosing something less simple might be a better choice...but could be more complicated to actually make. Sugarfree baking might be pretty difficult, esp. because you don't have time to experiment.

If you want to get really easy, and have good fruit, fresh berries with whipped cream and/or sugar free ice cream and/or chocolate syrup might be nice.

Try the diabetic thread as well for dessert suggestions...I'm not sure where it is, but I've seen it.

I agree with sugar-free ice-cream and toppings being quite simple! Plus you can add bowls of fruit to make it a bit healthier. Also, I'm not completely sure if splenda has been tested enough to be used during pregnancy or not, so perhaps you'd want to run it by your friend and see if she uses artificial sweeteners or not (that might also trump the sugar-free ice-cream, though).

You could try it with fructose. It doesn't have the same BS spice regular sugar does.

If you do have ice cream, go with low fat as well, or maybe a frozen yogurt. High fat foods don't raise blood sugar immediately, but they will later after the fat has digested.

Here's a recipe for the Splenda Angel Food Cake. (http://splenda.allrecipes.com/Recipe/Recipe.aspx?nprid=76227) From additional reading, though, it looks like Angel Food Cake is one of those things that are kind of iffy when you use Splenda.

Here are a bunch of other cake recipes - how about a lemon pound cake? (http://splenda.allrecipes.com/Search/QuickSearch.aspx?remoteQuery=pound+cake&x=0&y=0) Or even a regular one - that would be really good with some fruit.

Sorry I haven't replied sooner ladies! I was busy with the shower sat & sun.

I tried making an angelfood cake with splenda on Saturday & it turned out more like sponge cake than angelfood (& FTR, I beat the heck out of the eggwhites!). I personally wouldn't recommend trying it, but I also can't stand artificial sweeteners. The texture & the flavor just weren't what I had in mind, but my pg friend really liked it & took the leftovers home!:D

Saturday evening, I ran to the grocery & picked up all the fixin's for a sugar free ice cream bar. It went over really well. I never knew how much sugar-free stuff was out there!
