Need Pot Luck Help

Hi! My office is having a "cajun potluck" on Thursday and I want to bring a dessert. Besides King Cake, which I would totally mess up, and bananas foster, whcih need to be served right away, what's something I could make that would be fun and pot-luckable?

What about bread pudding? I've only ever had that in New Orleans, so it might fit the cajun theme.
