View Full Version : Healthy Sloppy Joes! (One pan meal!)

I've made this one several times and it's freak'n awesome! Remember to toast your buns and melt some butter on them for even more taste! This makes 8 to 10 sandwiches! Yumm!

Sloppy Joes
1 pound extra-lean ground beef
1 onion, diced
4 cloves garlic, minced
1 jalapeno, minced
1 red pepper, diced
1 can small red beans or pinto beans, preferably low sodium drained and rinsed
1 1/2 cups no-salt-added tomato sauce
2 tablespoons tomato paste
1 tablespoon red wine vinegar
1 tablespoon molasses
1 tablespoon Worcestershire sauce
1 teaspoon mustard powder
3/4 teaspoon salt
Freshly ground black pepper
8 whole-wheat burger buns

Brown the meat and the onion in a large nonstick skillet over medium-high heat for 5 minutes, breaking up the meat into crumbles as it cooks. Pour the drippings out of the pan and discard. Add the garlic, jalapeno, and red pepper and cook 5 minutes more, stirring occasionally. Stir in the rest of the ingredients, reduce heat to low, and simmer for 5 minutes more. Place a half-cup scoop of the mixture onto each bun and serve.

Here's another really simple and tasty sloppy joe recipe from the Food Network (http://www.foodnetwork.com/food/recipes/recipe/0,,FOOD_9936_15685,00.html?rsrc=search). It makes more than 6 (more like 10), and if you want to you can omit the sugar. Don't skip the marjoram! And I agree with sxsw_dad, you must toast the buns, that's one of the best parts!2 tablespoons vegetable oil
1 large onion, diced
1 small red pepper, trimmed, seeded and diced
4 large cloves garlic, minced
1 teaspoon dried marjoram
2 pounds ground beef (chuck preferred)
Three 8 ounces cans tomato sauce
3 tablespoons sugar
3 tablespoons Worcestershire sauce
2 tablespoons red wine vinegar
1 1/2 tablespoons yellow mustard
1/2 to 3/4 cup water
Kosher salt and freshly ground black pepper
6 hamburger buns, toasted

In a large saute pan, heat the oil over medium-low heat, add the onions, saute for 5 minutes. Add the peppers and cook for 5 minutes more. Stir in the garlic and marjoram, continue to cook for 2 minutes more. Transfer vegetables to a bowl with a slotted spoon and reserve. Add the meat to the pan, increase the heat to medium, and cook the meat, breaking it up with a wooded spoon, until it just loses it's color about 5 minutes. Pour excess fat from the pan and discard. Combine the meat and vegetables in the pan along with the tomato sauce, sugar, Worcestershire, vinegar, mustard, and 1/2 cup of the water. Bring the mixture to a simmer, cover, and cook for 20 minutes. (If the mixture appears to be too dry add the additional water.) Season with the salt and pepper to taste. When ready to serve divide the mixture evenly between the buns. Serve.

This is one of my favorite sloppy joes recipes (from Epicurious). I like to serve them on whole wheat buns with shredded cabbage.

SpicyTurkey Sloppy Joes
3 tablespoons olive oil
1 1/2 pounds ground turkey
1 large green bell pepper, chopped
4 large garlic cloves, chopped
3 tablespoons chili powder
1 1/4 cups ale or beer
3/4 cup bottled chili sauce or ketchup
1 4-ounce can diced green chilies
2 tablespoons Worcestershire sauce
1 cup finely chopped green onions
6 sourdough rolls, split, toasted
2 cups shredded romaine lettuce or packaged garden salad mix or shredded cabbage

Heat oil in a large pan over medium high heat. Add the turkey, the green pepper and the garlic and cook until turkey is lightly browned, breaking up the meat -- about 10 minutes. Add chili powder, cook 1 minute. Add beer, ketchup, chilies and Worcestershire sauce. Reduce heat to medium-low and cook until the mixture thickens, stirring often, about 15 minutes. Mix in green onions; season with salt and pepper.
Serve on Rolls with shredded cabbage and lots of napkins.
