Can't say it's the best or anything, but we found the Sahara to have decent food and awesome price... It's like $10-$12. I really like the make your own omelette bar, found theirs to be the best. They also had a lot of fresh fruit and the food was just good.
Thought Mandalay Bay STUNK royally, food was bad.
MGM Grand was pretty good, but was I think $25.

Wynn by far. It is more expensive than the others...but you are in Vegas and you don't get the opportunity very often ;)

We tried the buffet at the Aladdin a while back and it was very tasty. So good, in fact, that we went back to visit a few more times. This was quite unusual, as we do all possible to avoid buffets at any cost. It had an international theme and was about $30 per person.

I've heard Mandalay Bay has the best.

The Bellagio buffet is fantastic (and HUGE)...but I've only had it for breakfast, not dinner. Definitely my fav. for breakfast, though! I think it was $20-30/person...something like that.

The Wynn is the best I've had.
You'll find many of the same "categories" of items at all the nicer buffets. Most of them try to have some ethnic choices (a Mexican, Italian, Chinese, or Japanese station, for example--or more often than not, all four!), a carving station with all the trimmings (potatoes, veggies, etc.), a seafood bar (crab legs, shrimp), a full salad bar, and a dessert bar. Basically there is something for everyone. You could be a hardcore vegan and eat like a pig at a Vegas buffet! They even usually have diabetic desserts available for those who need them.

I TiVO'd a Rachel Ray episode last year of her show 'Tasty Travels' and she recommended the Bellagio breakfast buffet. She said go on a weekday. She also said that it is $13.95 person, which is 1/2 a cost of a Sunday brunch. The episode was aired in June of 2006.

We went to the buffet at Excalibur and loved it. The price was very reasonable- I think it was $15 for lunch when we went. There weren't a lot of fancy foods, but the variety was pretty decent and the quality of the food was great!

Bellagio hands down THE best buffet that I/we've had before! We went yesterday & we wanted to go for breakfast. Breakfast ended at 11 A & since we were close to the cut-off time, they gave us the Breakfast price(weekday price) for the Brunch Buffet @ the Bellagio
WE did however, get to have some of the breakfast buffet in conjunction with the Brunch. I recommend the Brunch.
I had raspberry icecream, chix wellington, flank steak, ribs, sliced turkey breast, ...they pretty much had EVERYTHING. They had a greek station, shrimp galore, Duck, pork, sushi area, salad area, cheese station & dessert station, ALL diff. kinds of pizzas & LOTS more!
Everything was just incredibly delicious there! Most often when we've gone to other buffets on the Vegas strip, we feel really ill afterwards & with the Bellagio we didn't.

I think the best Seafood buffet is at the Rio, called the Village Seafood Buffet. You get lobster, snow crab legs, shrimp, oysters and sushi. They also have prime rib and other meat dishes. The desserts are to die for, if you go get the desserts behind the refrigerated counter, they are the better ones, you have to ask for them.

Wynn & Bellagio on this side.
Avoid Paris & Aladdin.

Bellagio first (Bellagio beats Wynn IMHO)
Wynn second
Paris third
Mandalay Bay 4th
Mirage 5th
Rio Seafood 6th
Alladin 7th
For cheap buffets, some of the better ones IMHO are
Orleans
Main St. Station
Sahara really isn't bad at all and it's really cheap
Flamingo
Avoid at all costs

Our favorite buffet to eat at downtown is at The Fremont Hotel. On the strip, its hands-down the Bellagio. We went there for brunch as well and it was AWESOME!!
The buffet at the Luxor is reasonably priced and decent food.
Off-strip, definitely the Rio!!
