Hi there
I'm throwing a surprise bridal shower for my sister this weekend (kitchen themed). I've picked up some lovely ceramic bowls that will be paired with a wooden butter knife made by our father. I would like to include a recipe for a spread (basically a dip of some kind that is thick enough that you would use a butter knife to put it on crackers or bread...)
Any thoughts? Thank you!

Buffalo Chicken Dip
8 oz. cream cheese, softened
1 c. shredded cheddar cheese
1/2 sm. bottle Frank's Red Hot Sauce
1/2 bottle Ranch dressing
2 c. chicken, cooked, shredded (I used the canned chicken breast from Costco with great results!)
Heat on low heat in a pan or small crockpot until both cheeses are melted (low heat is key!) Once cheeses are melted, stir and taste. Add more hot sauce and/or dressing to taste. Serve with bread, tortilla chips, celery, or anything you want.

I make something good- I take about a cup of pesto (homemade or bottled) and mix it with a container of cottage cheese, pureed in the food processor. Add salt and pepper. So good. I usually add a handful of good parmesan cheese, too. Amazing.

I like this Feta/Walnut dip (it's a Rachel Ray recipe):
1 clove garlic
1 cup walnut halves, toasted
1 1/2 cups feta cheese, crumbles
1/2 cup milk
1 teaspoon dried oregano
1/4 cup flat-leaf parsley, a handful of leaves
Freshly ground black pepper
1/2 teaspoon crushed red pepper flakes
4 flat breads or pitas, cut into wedges and toasted
Combine walnuts, feta, milk, oregano, parsley, black pepper, red pepper and garlic clove in food processor and pulse process until spread is smooth. Scrape spread into serving dish with spatula. Drizzle dip with extra-virgin olive oil and serve with pita.
I make a dip that has carmelized onions or shallots, mixed with pepper and goat cheese - it's delicious!

Have you tried the Appetizer (http://www.constantchatter.com/forum/showthread.php?t=4449&highlight=dip)thread? There are a bunch of dip recipes listed in there.
Artichoke dip is thick and spreadable (and delicious!)
1 large can artichoke hearts, drained and mushed with fork
1 cup grated parmesan
1 cup mayo
1 clove of minced garlic
Stir ingredients into a casserole dish and heat at 350 degrees for 30-45 mins, until top turns light brown.
