I just bought some Cremini mushrooms (baby portobellos) at the supermarket, and I am trying to come up with a creative way to prepare them. I was going to just saute them in garlic and oil but thought that was boring. Any ideas?

Mushrooms- the first thing that comes to mind is some mushroom risotto! YUM. Or are they big enough to do crab stuffed mushrooms with?

Saute them with some sliced red peppers and onions and serve them on a whole wheat bun with a bunch of melted white cheese and salsa and sliced avocado on top. One of my favorite veggie sandwiches. :)

You can make a mushroom torte. There is a recipe in the vegetarian thread. It has a rice crust.

I use them and make Rachael Rays BBQ Chinese Chicken Lettuce Wraps (except we usually eat it in tortillas)

One of my favorites, especially when I need a quick dish.
Balsamic Mushrooms
1/3 cup olive oil
3 cloves garlic, minced
1 pound fresh mushrooms, sliced
3 tablespoons balsamic vinegar
3 tablespoons white wine
salt and pepper to taste
Saute the garlic in olive oil for 1 to 2 minutes. Do not brown the garlic. Add mushrooms and cook 2 more minutes, stirring occasionally. Stir in balsamic vinegar and wine, cook another 2 minutes. Season to taste with salt and pepper.
I usually use less oil and more vinegar and wine since I like them tangy.

Does anyone have any more ideas for regular button mushrooms? I bought a mushroom growing kit because I love mushrooms, but now we are inundated with HUGE button mushrooms (1 or 2 of these is enough for most recipes). I have a ton more coming and I am running out of ideas.

Homemade cream of mushroom soup. You can mix the button mushrooms with some more exotic types.

I make mushroom soup with an entire tray of mushrooms. Basically you take 1 small onion (chopped), sauté it with EVOO, add 1-2 diced potatoes, a can of beans, the chopped mushrooms, then broth. I use porcini broth (made by Star, which is also sold in the US). In the last 15 minutes of cooking, I add 2 chopped garlic cloves, some parsley, and a rice/grain mixture. The original recipe also calls for pecorino but I prefer it without.
