I have recently become a big fan of guacamole dip, and would like to try to make some on my own. Does anyone have any really good guacamole recipies? I would imagine it's pretty easy to make, but not for sure all the ingredients and measurements. I've had bad dip before too, and I'm worried that the store-bought kind is not the best. But if you know of any store brands that are good, I'm willing to try. TIA!

This is how DH makes it:

2 avocados, pitted and mashed
1/2 onion, diced
1 tomato, diced
juice from 2 limes
tablespoon of torn fresh cilantro leaves
dash of salt to taste
optional: 1/2 jalapeņo, seeded & minced

No sour cream. :p It's not authentic.

Ok, this might sound yucky to some, but my mom makes it exactly like Sophia's DH, but... She mixes in cottage cheese! It's SOOOO yummy. I can eat it "straight up"!

She does use the juice of canned (pickled) jalapenos for a little kick. Mmm..

Here's how my mom and I make ours. It's a little more like dip than true salad.

2 smooshed up avocados
dash of lemon or lime juice (to prevent oxidation)
two heaping spoonfuls of Miracle Whip
half a small jar of picante sauce (I use Pace)

Mix it up and serve with tortilla chips.

i make mine like sophia, but i don't always add tomato, and i never add jalepeno.

can anyone answer a puzzling avacado problem i have? recently i have been noticing that most of the avocados i buy have stringy stuff in them. i don't like it at all. i feel like half of the avacado is wasted bc i pick out all the strings. does anyone know which kinds of avacado don't have the strings?

I don't have a recipe, but here is what I do:

smoosh up an avacado
mix in diced onions, lime juice and cilantro. I eyeball it all and just taste it to see if it's ok. :)

I make it like Sophia except that I mash 1 avacado, cube the other. Oh, and I let the tomato, lime, salt (and pepper) marinate while I'm getting the avacado ready.

I'm afraid I make it with the help of a mix. I buy two avacadoes and then add the Concord mix with it:

You can add extras such as a tomato or onion if you like.

I know there are CA (Haas) and FL avocados. I've never had the ones from FL but have heard that they are a more firm fruit and the skin is very shiny. Maybe that's the difference?

I make mine like Sophia's DH does as well. We add some cayenne pepper in and pepper as well. I always try to use the Hass avocados because they are smoother tasting and mash easier than the FL variety. I don't like the FL variety, but will use them in an emergency! :p

I make mine like Sophia's husband, except I skip all the work by just mixing in my favorite salsa. It's basically just to taste.

I make it similar to those who have already posted, but I also throw in some garlic powder and a touch of cayenne pepper.

The recipe I got from a woman I used to work with (similar to the one Sophia posted) calls for putting all the ingredients (minus the avocadoes) together the day before to allow it to marinate. It really makes a world of difference IME. We mash the avocado, then use a fork to put the wet ingredients in so it isn't too mushy.

I make mine like Sophia. The string problem comes from when the avocado is too ripe I think. I noticed that if the avocado is a bit harder, there are no strings.

My absolute favorite is from a packet at the store. I prefer it to fresh home made, I know call me crazy. Mix with avacados. It is:

Anyone have any tried and true guacamole recipes?

Mine isn't really a recipe. I just mash up a few avocadoes and add salt, cumin, and garlic to taste, and a dash of cayenne. Sometimes a little chopped tomato.

One time, on DH's insistence, I used half a can of Rotel instead of my usual seasonings. That wasn't bad, but I preferred the old way.

Mine is simple. Avocado, lime juice, salt, garlic, onion powder and/or chopped onions.

Yeah, I usually just "cheat" and mash up avocado w/ salsa. :) But we're serving it for a party this weekend and I wanted something a little more "fancy".

avocado, lime juice, garlic and maybe tomato and jalapeņo... touch of salt. The biggest thing I find is to make it far enough ahead to let the flavors meld

I don't really have amounts, but I will guess. This is truly awesome guacamole, which always gets cleaned out whenever I bring it to a party.

2 or 3 ripe avocados, mashed
juice of half a small lemon
a little minced fresh jalapeno (slice off a few rounds, and then chop small)
minced red onion (1 or 2 slices, minced)
good handful of chopped fresh cilantro
1 or 2 cloves garlic, crushed

Mash together, let sit in the fridge for awhile so flavors mingle. I always save an avocado pit, rinse it off and nestle it in the top of the guac until serving -- it really does keep it from turning brown.

All of these amounts are 'to taste', so experiment as you go along. :)

My key to making it look fancy is not to mash it up TOO much. I have two recipes: my casual recipe is just to mash up avocado with salsa, garlic salt and lemon juice. When making it for parties, I cube an avocado (half it, remove the pit, then make checkerboard slices in the avocado all the way down to the skin before spooning it out), put it in a bowl with chopped tomato, onion, fresh copped garlic, fresh lime juice, maybe a bit of jalapeno. Mash a little bit, but leave smaller cubes of avocado still whole. Gives it a very "fresh" pico de gallo look.

Also, the pit in the bowl helps keep it fresh, as does covering the bowl with saran wrap and actually pressing the saran wrap down until it touches the top of the guac.

No recipe -- just ingredients

Mashed up avocado
Onion chopped VERY small
Diced tomatoes
Salt
Fresh lemon juice

Avocado
seeded and diced tomato
diced jalepenos
cilantro
diced onions
salt
pepper
chili powder
dash of cumin
key lime juice
Mash together with hands.

Also, we have a long standing, very strange family tradition when it comes to making guac. This has always worked for us so don't laugh!

Keep the seeds from each avocado you use, place them in one glass and fill with water. Just leave the glass on a counter, doesn't have to be near it and your guacamole won't turn black. Don't put the seeds in the guacamole, just in the glass. I know it sounds silly, but it has always worked for us. We call it our trucos de la bruja del Buella :p

Mine is like many others, and never measured:
avocado, ripe
onion, red, diced small
roma tomato, diced
fresh jalapeno, seeded, minced,
fresh lime juice
cumin
coriander
a little chili powder
cilantro, minced
salt to taste

Tough to get the feel if you haven't made it a bunch, but starting to make it from scratch, if one is so inclined, is the first step!

I love guac! there's nothing like it!

I suppose I'm also a "cheater" when it comes to making mine, but I love it, so who cares? I like to try to keep chunky, rather mixing it to a smooth consistency.

1 smooshed up avocado
about 2 teaspoons of salsa verde
1-2 teaspoons of lemon or lime juice
salt and pepper to taste

I've gotten lazy in making mine, and zap everything in the Cuisinart. :)

2 avocadoes, diced
1-2 whole cloves peeled garlic
1/2 small red onion OR 2-3 scallions, roughly chopped
1 plum tomato, seeded & roughly chopped
1 tbsp. lime juice
1 tsp. salt (or to taste)
Handful of cilantro leaves

Zap the garlic and onions for about 10 seconds, until finely minced. Then add the avocado, lime juice, salt, and pulse a few times. Add tomato & cilantro, pulse quickly again.

Sometimes I blend in a dab of sour cream to make it a little smoother.

I get a lot of compliments on mine:

1 Avacado, mashed
4 grape tomatoes diced up a little
2 - 3 scallions
squirt of lemon juice
2 tbsps of sour cream (or plain yoghurt if you're in a healthy mood)
a really liberal shaking of sweet chilli sauce (the asian variety) to taste
salt & pepper
handful of chopped cilantro

Probably an asian take on gaucamole maybe? Doesn't really taste it, just delicious (the sweet chilli sauce makes all the diffence and isn't too hot)

Mine's pretty simple - but no measurements, just a list of ingredients. I just try it along the way and adjust to taste

Avocado
Minced Garlic (I always use fresh, not the jarred stuff)
Minced Red Onion
Coarse Salt and Freshly Ground Black Pepper
Jalapeno, seeds and ribs removed and finely minced
Cilantro
Lime Juice

It's so good!

Here's a tried & true recipe - http://allrecipes.com/Recipe/Guacamole/Detail.aspx

It's a simple recipe, but the best I've tried so far.

3 avocados - peeled, pitted, and mashed
1 lime, juiced
1 teaspoon salt
1/2 cup diced onion
3 tablespoons chopped fresh cilantro
2 roma (plum) tomatoes, diced
1 teaspoon minced garlic
1 pinch ground cayenne pepper (optional)

Mash together the avocados, lime juice, and salt. Mix in onion, cilantro, tomatoes, and garlic. Stir in cayenne pepper. Refrigerate 1 hour for best flavor, or serve immediately.
