Cooking classes in Paris

So I'll be in Paris in September and thought how fabulous it would be to pop into a cooking class for an afternoon. i checked out Patricia Wells' schedule but she is all booked. Has anyone done this before and how do you go about doing it? I have a feeling most classes will run for a week at a time and I'm only willing to abadon my husband and children for an afternoon so I bet I'm out of luck. :) Thanks for any ideas.
