I have 2 lbs. hamburger that I HAVE to use tonight - no ifs, ands, or buts.
BUT...DH won't eat lasagna, spaghetti, soups, or meatloaf. We just had hamburger steak on friday - anyone have any decent hamburger recipies? I need em - quickly!

I love the Impossibly Easy Cheeseburger Pie on the Bisquick box. It's really good and when you pair it with a salad and a veggie it's very filling. :)

allrecipes.com has great unique burger and sandwich recipes I like to try. Here are a couple that might work for you:
Loosemeat Sandwiches:
INGREDIENTS:
2 tablespoons vegetable oil
1 clove garlic, minced
1 onion, chopped
1 pound lean ground beef
1/2 cup tomato juice
2 tablespoons brown sugar
1 teaspoon Worcestershire sauce
2 teaspoons seasoning salt
1 teaspoon browning sauce
1/8 teaspoon ground cayenne pepper
4 hamburger buns

DIRECTIONS:
In a large skillet over medium heat, saute garlic in oil until it begins to brown. Add onion and saute until soft. Add beef and saute, stirring constantly with a fork to crumble as finely as possible. When meat is browned, add the tomato juice, brown sugar, Worcestershire sauce, seasoned salt, browning sauce and cayenne pepper. Stir together and let simmer uncovered, stirring occasionally, until the liquids have evaporated (about 15 to 20 minutes). Spoon mixture onto hamburger buns and serve.
Onion and Cheddar Burgers:
2 pounds ground beef
1 cup chopped onion
1 egg, beaten
1/2 cup ketchup
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon dried oregano
1 tablespoon Worcestershire sauce
3/4 cup shredded Cheddar cheese
6 hamburger buns

DIRECTIONS:
In a large bowl, combine beef, onion, egg and ketchup. Season with salt, pepper, oregano, and Worcestershire sauce. Lightly mix in cheddar cheese. Shape beef mixture into 6 thick patties. Preheat oven on broiler setting.
Place hamburgers on broiler pan. Broil, turning once, until cooked through, about 5 minutes per side. Serve on hamburger buns.

How about meatballs? Swedish meatballs or Greek kefthedes (with mashed potatoes if your DH won't eat noodles) are a good easy way to use up the meat. Plus, you can freeze them if you don't go through them.
DH's Kefthedes Recipe - you can double it if you have two pounds
Mix in a large bowl:
* 1 lb of ground pork or minced beef, or a mix of the two,
* 4 slices of French Biscottes (or 2 slices of toasted sliced white bread; or 12 slices of round Melba toast; or 9 slices of rectangular Melba toast), soaked in water first, and then drained,
* 1 egg,
* half a medium-sized onion, very finely chopped,
* 1 tbsp dried mint,
* 1 tbsp dried oregano,
* 1 tsp dried parsley.
Form small round balls out of the mixture, each the size of a large walnut. In a pot, heat in hi heat
* 2 cups vegetable oil; or enough to get a height of 3/4''
until it's very hot. Fry the meatballs in this pot until their surface is a dark brown (almost burned); you'll need at most 5 minutes per ball. Deposit the fried balls in a bowl lined with paper towels so that the towels may absord some of the oil.
Serve hot with potato chips or french fries (you can use the pot in which you just fried the keftethes to make the fries), and a side of tzatziki for dipping. You can also enjoy them cold.
Variations
The above recipe can be modified in (at least) the following ways:
* You can use the keftethes as meatballs in a tomato sauce, and serve over pasta.
* You can make a handful of large, hamburger-sized patties, which you can then grill or fry. You can then serve them in the traditional bun, or in an open-faced sandwich with a fried egg on top.
* You can combine the keftethes with pita bread, tzatziki, and other ingredients to make stuffed pitas.
Shepherd's Pie
Brown 1 1/4 lb. of ground beef
Drain fat and spread in 11x7 baking dish
Cover with 3 cans of Campbell's Vegetable Beef Soup
Cover with mashed potatoes (usually 4 large potatoes do the trick)
Bake at 350 degrees for 20ish minutes

Tacos? Mr2U and Teen2U can polish off 2 lbs. of taco meat in two days, easy.
Sloppy Joes? Ditto - and it makes for good lunches, too.
OR - you could make one pound of each, then freeze them for dinner another time!
Meatballs - I just make them like I make meatloaf, form them into balls, put them in a baking pan, cook till brown, then pour off the fat, cover them with two jars of Heinz Savory Beef Gravy, cover it with foil, then bake them - serve with egg noodles or mashed potatoes.
