Does anyone know of a good recipe for a birthday cake?

Can the person you're making this for have sugar in moderation? I just recently found out that I have Type I diabetes and have to take insulin, but as long as I eat a balanced diet and am keeping my blood sugar levels under control, my doctor said I can have some sugar. So for sweets, I look for things that have lower carbohydrates. The Cooking Light website (http://www.cookinglight.com) is pretty good for that... Many of their recipes have the nutrition information listed. I try to look for recipes that have 30 or fewer grams of carbohydrates per serving. (This Citrus Chiffon Cake, for example: http://food.cookinglight.com/cooking/recipefinder.dyn?action=displayRecipe&recipe_id=1072219 )And if the recipe has a decent amount of protein (lots of nuts, or a cheesecake, say), so much the better- it helps to moderate sugar levels.

My husband can't have salt and I recently found a cake mix by Sweet N Low that was low sodium, no sugar. I don't know if they might carry it in your area.

If your sugar is manageable like littlefred, that sounds like a much better deal.

The cake mix was okay, but it wasn't terrific. Yet, I have nothing to base it on as I don't think I have tasted a cake that was totally sugar free. My Mom is a diabetic and I tried to get the baker to make one for me, but she said she had not yet found a full flavored recipe for one. :(

Although I don't have any experience with diabetic cooking, you might want to check out Light and Tasty magazine or their website (http://www.lightandtasty.com). I think a lot of their recipes are diabetic-friendly. Also, just FYI--some of the recipes on the website are only accessible to subscribers, but most of them are available to the general public.
